1 c Shortening
2 c Sugar
4 Eggs
3 c Sifted cake flour
2 1/2 ts Baking powder
1/2 ts Salt
1 c Milk
1 ts Almond extract
1 ts Vanilla extract
Lemon-orange filling Or; see recipe Pineapple filling; see -recipe Boiled frosting; see recipe 1 sm Fresh coconut, or; grated
1/2 c Flaked coconut

Cream shortening; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in flavorings. Pour batter into 3 greased and floured 9-inch round cakepans. Bake at 375
degrees for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks. Spread Lemon-Orange Filling or Pineapple Filling between layers; spread Boiled Frosting on top and sides, -----

As the name suggests lard instead of butter forms the base of this cake, giving it a unique texture and flavour profile, when combined with homemade candied peel and soaked dried fruits.

For dough
- Bread flour 300g
- Warm milk 150g
- Caster sugar 50g
- Lard 50g
- Egg x1
- Fresh yeast 10g*
- Salt 5g
*7g dry yeast
- Mixed fruit 200g soaked in: *
- Gin 4 tablespoons
- Juice from one orange
- Zest from 1/2 orange
- Juice of lemon
- Zest of 1 lemon
* in the episode I mentioned that I
soaked the fruit in 150ml of
water but I made the cake a
second time and used the
ingredients above for more

- Candied peel 50g
- Lard 225g (room temp)
- Caster Sugar 225g

This is a video showing how to make a simple coffee cake with whipping cream frosting, without using oven, #no_oven butter paper #no_butterpaper and much icing tools.

• 1 cup All purpose flour (200 mL)
• 1 tbs cocoa powder
• 1 tbs cofffee powder
• 3 pinchsalt
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1 egg
• 1 cup powdered sugar(200mL)
• 1 tsp vanilla essence
• 100 mL fresh milk +1tsp
• vinegar=buttermilk
• 100 mL sunflower oil

• 200 mL whipping cream
• 1 tsp full coffee powder
• Sugar syrup
