Tiny House Cooking - Chocolate Applesauce Cake
Easy moist chocolate cake! My version is gluten free, though it's easy to make with wheat flour as well.
Chocolate Applesauce Cake
1/2 cup butter
1 1/2 cups sugar
2 eggs
2 cups applesauce
2 cups flour
2 T. cocoa powder
1 1/2 t. baking soda
1/2 t. salt
Topping:
1 cup chocolate chips
1/2 cups nuts
2 T. sugar
Bake in a 9x13 pan at 350 for 35-40 minutes.

I hope to help others learn from my mistakes and make life just a little easier for anyone else interested in pursuing a similar lifestyle.

For a bit of my background, as a child, I was fortunate enough to be able to spend much of my free time exploring and playing in the woods. Little has changed now that I'm older I suppose. I moved to a place with a bigger woods and still enjoy spending my time outside gardening, hiking, exploring, and photographing the natural world around me. As the eldest of seven children who grew up in a homeschooling family, I had the opportunity, not always appreciated at the time, to learn to do quite a bit of work. I've enjoyed a wide range of jobs, everything from greenhouses and flower arranging to wilderness therapy with teens, to milking cows. Mostly, I enjoy doing the kinds of things that I think provide a real service or value to others. Some of my other hobbies include backpacking, hosting people, cooking, preserving food, anything to do with nutrition, reading, journalling, and sitting around a fire and talking to my close friends.

Old Fashioned Applesauce Cake!
The recipe for this delicious Applesauce Cake was given to me by a sweet lady named Barb. Her mother would make it for her birthday and sometimes for Thanksgiving and Christmas. This cake became a family tradition and I can see why because it is simply amazing. I love old recipes and I can definitely see this cake becoming a family favorite in my home. The cake is so moist and flavorful and eaten with a cup of coffee is just heavenly. Thank you Barb, for this outstanding recipe!
Applesauce Cake
Ingredients
2 1/2 cup applesauce
2 1/2 cup light brown sugar
1 cup shortening
2 eggs
3 cups flour
1 tsp nutmeg
1 tsp cinnamon
1 tsp allspice
pinch salt
1 tsp baking soda
1 cup raisins
1 cup chopped dates
1 cup nuts (I used walnuts)
Instructions
Cream shortening and sugar together
In a separate bowl, add soda to applesauce - it will be foamy - then add to shortening and sugar mixture.
Sift together flour, salt, and spices, then add one cup at a time to the first mixture, blending well between each addition.
Dredge nuts, raisins, and dates lightly with a small amount of flour, and add to first mixture.
Add 2 unbeaten eggs last and continue to mix lightly until eggs are blended into the cake.
Pour into a greased, lightly floured tube pan.
Bake in a slow oven (325 - 350) for at least one hour. I baked mine at 340 for 1 1/2 hours.
Drizzle with a buttercream glaze.
Buttercream glaze
Mix half stick of melted butter, 1/4 cup milk, tbsp vanilla extract, and 2 to 3 cups of powdered sugar depending on how thick or thin you like the glaze.
Note: Tube pan is best. Bundt pan seems to stick.

Homemade Applesauce Cake Recipe

In a large bowl combine:
2 1/2 cups flour
2 cups white sugar
1 1/2 tsp cinnamon
1 1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp ground cloves
1/4 tsp salt
In a medium bowl combine:
2 eggs
1/2 cup vegetable oil
1/2 cup water
1 1/2 cups unsweetened applesauce
Mix the dry and wet ingredients together. Put batter in a well greased 9 x 13 pan. Mix together:
1 TBS white sugar
1/4 tsp cinnamon
Sprinkle over the cake batter. Bake in a preheated 350 degree oven for 25 - 35 minutes until toothpick inserted comes out clean.
Cool for 20 minutes and serve! You can top with whipped cream, confectionary sugar, ice cream or frosting!

▪️Applesauce Cake Recipe:
▫️2 3/4 C AP Flour
▫️2 C Sugar
▫️1/4 tsp Baking Powder
▫️1 1/2 tsp Baking Soda
▫️1 1/2 tsp Salt
▫️1 tsp Cinnamon
▫️1/2 tsp Cloves
▫️1/2 tsp Allspice
▫️1/2 C Vegetable Oil
▫️1/2 C Water
▫️1 1/2 C Unsweetened Applesauce
▫️2 Eggs
▫️1 C Raisins, chopped
▫️1/2 C Chopped Walnuts (optional)
Bake on 350F for 35-40 minutes in an oblong pan. Bake for 25-30 minutes at 350F in circle 9 inch pans.
▪️Penuche Icing Recipe:
▫️1/2 C Butter (1 stick)
▫️1 C Packed Brown Sugar
▫️1/4 C Milk
▫️ 1 3/4 to 2 C Powdered Sugar (confectioner sugar)
Melt butter and sugar together for 2 minutes, stir in milk. Allow to cool to room temperature. Add butter mix to the powdered sugar in a mixing bowl. With a hand mixer or stand mixing bowl (whisk attachment) whisk for about 5 minutes, or until light and fluffy.
