So, if you are looking to try something different for your holiday cookie exchange this year, read on!!
Note: This is my mom’s recipe that I adjusted a bit.
Recipe:
½ cup butter (softened) ⅔ cup of sugar 3 eggs 2 tablespoons of vanilla flavoring 1 tablespoon of almond flavoring 2 tablespoons of anise seed 1 ¾ - 2 cups of flour (depending on how much flavoring you put in. More flavoring, a little more flour. 1 teaspoon of baking powder 1 pinch of salt
Beat butter until smooth. Gradually add sugar and beat well. Add eggs and vanilla and other flavorings and beat well. Sift flour, baking powder and salt into egg mix. Dough should be sticky soft.
For best results, make a soft batter. For variation, substitute/add other flavors. Finely chopped nuts may also be added.
Pizzelles can be made in advance--will keep indefinitely. May also be frozen without loss of flavor.
