4 Eggs 1 c Sugar 2 c Flour; all-purpose 1/2 ts Salt 1/2 ts Baking powder 1/2 ts Vanilla Lemon; grated rind of 1/2 1 ts Anise seed 1. Preheat oven to 325F. 2. Beat eggs and sugar together. 3. Sift flour with salt and baking powder. Add to the egg mixture. Blend in the vanilla, lemon rind and anise seed. 4. Spoon into a greased long (about 12") poundcake tin. Bake about 40 minutes, until light brown. 5. Slice while warm into 1/3" pieces. Place on a large cookie sheet and toast in the oven until golden. Turn over and toast other side. Makes about 20. -----

Remember the anise cookies your Nonna always made? They are our absolute favorites. You don't need a special occasion to indulge....just a good cup of coffee to enjoy them with. Ingredients: 5 eggs 1 stick 1 tbsp. vegetable oil 3/4 cup of sugar 1/4 cup of milk 1 1/2 tsp. anise flavoring 3 tsp. baking powder 1/2 tsp. salt 4 cups of flour Cream together eggs, butter, oil, sugar, milk, anise flavoring, and salt. Mix till smooth. Add baking powder and set aside for 5 minutes. Gradually add all the flour. Flour your hand (dough is soft and sticky). Form dough in the shape of a small oval. Bake at 350 for 10-12 minutes. Decorate with icing and sprinkles.

5 eggs 3 cups sugar 4 cups flour 1 tsp baking powder 1 tsp salt 1 Tbsp ground anise (optional) anise seed (for sprinkling on the cookie tray)
A wooden Springerle mold or carved rolling pin is needed for the engraved designs on the cookies. I recommend using a rolling pin that has a more well-defined pattern than the one I am using.
After making the dough, chill the dough for about 2 hours. When rolling the cookies out, spray the rolling pin with non-stick spray. Once the cookies are placed on the cookie tray, place a towel over the cookies and let them sit at room temperature to dry for about 2 days. Then preheat the oven to 275 degrees F and bake for about 15 minutes.
