How To make Shark Stew
2 c Celery; cut into 1" pieces
2 md Onion; chopped
3 tb ;Water
58 oz Tomato, stewed, with Mexican
-seasoning 1/2 c Cilantro, fresh; chopped
2 lb Shark; or other firm white
-fish, boned, skinned & cut -into pieces about 1 1/2" -by 3" Hot cooked rice Homemade or prepared salsa Cilantro leaves Plain yogurt or sour cream Lime wedges Salt and pepper In a 5-6 qt pan, combine celery, onions and water. Stir often over medium-high heat until water evaporates and vegetables start to stick and brown slightly, about 10 min. Stir in tomatoes and their liquid into pan along with chopped cilantro. Bring to full boil on high heat. Push fish down into vegetables; cover and simmer on low heat until fish is opaque but still moist-looking in the center of the thickest piece (about 20 minutes). Ladle stew into wide bowls and add cooked rice, salsa, cilantro leaves, yogurt, juice from lime wedges and salt and pepper, to taste.

Ingredients for Chilli Fish:
Boneless fish cubes- 300 gms
Marinate with:
- Salt- 1/2 tsp
- Red Chilli powder- 1/2 tsp
- Lemon juice- 1 tsp
- Ginger garlic paste (watery)- 1/2 tsp
Batter/mix to be added to marinated fish cubes:
- All purpose flour/maida- 1 tbsp
- Cornflour- 2 tbsp
- Pepper powder- 1/4 tsp
- Egg white- 1
- Salt- a pinch
- Garlic, chopped- 5-6 cloves (2 tsp)
- Green chillies, thinly sliced- 2
- Spring onion chopped- 2 tbsp
- Onion petals- 1 small white onion
- Green pepper/capsicum cubed - 1 cup
Sauce mix:
- Red Chilli Sauce- 2 tbsp
- Tomato sauce- 1 tbsp
- Soy sauce- 2 tsp
- Vinegar- 1 tsp
- Cornflour slurry- 1 tbsp cornflour mixed with 2 tbsp water
- Oil- for deep frying and 1 tbsp for sautéing
Preparation:
- Wash and cut the boneless fish into cubes, pat dry.
- Marinate the fish cubes with the items mentioned. Mix well and set aside for 15 mins.
- Add the items for the batter to the marinated fish cubes and mix well.
- Heat oil in a pan/wok for deep frying (180 C)
- Fry the fish cubes in hot oil till golden. This should take around 3 mins(heat can be reduced to 160 C)
- Don’t overcrowd the pan & fry in 2 batches.
- Chop the garlic, spring onion whites and greens.
- Slice the green chillies, cube the green pepper and take out petals from 1 small white onion.
- Prepare the sauce mix.
Process:
- Take a wok/kadai and heat 1 tbsp of oil.
- Add the chopped garlic and spring onion whites. Give a stir.
- Now add the sliced green chillies, mix & sauté for 15 secs.
- Add the green pepper & then the onion petals. Sauté on high heat for 30 secs.
- Add the fried fish cubes, mix and keep sautéing on high heat for another 1 min.
- Now pour in the sauce mix and mix it well to coat the fried fish pieces.
- Add the cornflour slurry & mix it well till it dries up and coats the fish pieces.
- Add some chopped spring onion greens, mix and serve hot.

Fish maw is dried fish air bladder. Rated as one of the precious Chinese ingredients along with abalone & sea cucumber, fish maw is very nutritious and is also full of collagen. Best of all, it’s free of cholesterol. Many Chinese believe that consuming fish maw will help improve their complexion.
Despite its name, sea cucumber is actually not a plant. They are marine animals and are found on the sea floor worldwide. Although the Chinese has long considered sea cucumber as a delicacy, it is only in the recent years that science has validated their health benefits effects. Sea cucumber has shown therapeutic values such as wound healing and anti-cancer.

Ingredients:
Serves 8
1.5 litre of chicken stock
25 g of fish maw (before soaking)
1.5 pieces of sea cucumber
200 g of crab meat
1.5 tablespoons of oyster sauce
175 g of prawns - de-shelled & de-veined
Thicken the soup up with potato starch solution (you can mix 2 teaspoons of potato starch with just enough water to dissolve them)
2 beaten egg
