How To make Broiled Spicy Shark
1 lb Shark fillets (3/4" thick)
1/3 c Lemon juice
1/4 c Chopped parsley
1 T Chopped fresh basil, or
1 t Dried basil
1 x Clove garlic, minced
2 T Seafood sauce or chili sauce
1 T Light soy sauce
Place fish fillets in plastic bag. Add lemon juice, parsley, basil, garlic, chili sauce and soy sauce. Close top of bag and refrigerate for at least one hour, but not longer than 8 hours. Remove fish from bag and save marinade. Place fish onrack of pre-heated broiler about 3 inches from heat and broil for 3-5 minutes. Turn fillets over, brush top with marinade and broil an additional 5-8 minutes until fish flakes or is done to taste. Boil rest of marinade until it's reduced by half and pour over fillets when serving.

Dr. Roast Fish ( - Mayaro, Trinidad - We’re starting on the East Coast of Trinidad, and going to meet up with Dr. Roast, who is famous for his roast fish. And Trinbagonian roast fish is something very unique and his recipe is different from any other roast fish I’ve seen. He loaded up the fish with corn, plantains, green seasonings, and cheese to top it off! We also had a lobster covered in green seasoning, and topped with cheese again. Very nice guy and fresh seafood!
Brasso Seco Village ( - Next we drove into the mountains to Brass Seco Village. They have an indigenous population and they offer a number of eco friendly tourism opportunities like visiting the cacao plantations and seeing the entire process of how chocolate is made. It was a great learning experience, and eating the fresh cacao fruit was the highlight. We also had a quick lunch, a local meal and some Trinidadian dishes like smoked chicken in coconut milk.
Uncle Sam & Sons ( - Finally to complete this food tour today, we headed to the most famous beach in all of the island - Maracas Bay! Along with the beach, you can’t go to Maracas Bay without eating Bake and Shark. The bake is more of a fried bread and the shark is real local shark meat that’s seasoned and breaded, then deep fried and loaded into the bake. Finally, you add all your own toppings like pepper sauce, shadow beni, and pineapple. The best thing to do is then go stand or sit on the beach to enjoy the most famous and iconic beach food in Trinidad and Tobago!

Trinidad Bake and Shark | Taste of Trini
When I head to Maracas Beach, the first thing that comes to mind when thinking of food, is Bake and Shark. Some of you might call it Shark and Bake. This is fried shark sandwiched in a fried bake, layered with many condiments and toppings. In this video, i'm making a simple, homemade replicate of this sandwich. Here's what you'll need for the recipe.
10lbs of Shark , filleted and washed with limes and/or flour
1 tbsp of salt
1 tbsp lemon pepper
1 tbsp old bay seasoning
1 tbsp cayenne pepper
1 cup of FRESH green seasoning ( If you can't blend fresh seasoning then use whatever you can get your hands on)
For the flour mixture:
1 1/2 cups of flour
3 tsps salt
1 tbsp cayenne pepper
2 tsps black pepper
2 tsps old bay seasoning
Condiments:
Shadon beni (bandhania) and garlic sauce
Ketchup (optional)
Mustard (optional)
Pepper sauce or hot sauce
Tamarind or sweet sauce
Toppings:
Lettuce
Pineapple
Onions
Cucumbers
Cabbage (optional)
FRIED BAKE RECIPE:
2 cups of flour
1 tsp yeast
1 tsp sugar
1 1/2 tsp of crisco or cookeen (or butter)
2 tsps baking powder
1/2 tsp salt
lukewarm water to make the dough
