How To make Self Frosting Date Cake
1 cup chopped dates
1 teaspoon baking soda
1 1/4 cups boiling water
3/4 cup shortening
1 cup sugar
2 eggs
1 2/3 cups flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 cup firmly packed brown sugar
1/2 cup chopped pecans or walnuts
1 6 oz pkg semisweet chocolate morsels
Stir dates and soda into boiling water; set aside, and let cool. Cream shortening; gradually add 1 cup sugar, beating well at medium speed on mixer. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, and salt; add to creamed mixture alternately with date mixture, beginning and ending with flour mixture. Mix after each addition. Pour batter into a greased and floured 13x9x2 inch baking pan. Combine brown sugar, pecans and chocolate morsels; sprinkle over top of batter. Bake at 350

Carrot Cake
Ingredients:
2 cups (250 grams) all-purpose flour
2 teaspoons baking soda
1/2 teaspoon fine sea salt
1 ½ teaspoons ground cinnamon
1 ¼ cups (295 ml) canola or other vegetable oil
1 cup (200 grams) granulated sugar
1 cup (200 grams) lightly packed brown sugar
1 teaspoon vanilla extract
4 large eggs
3 cups (300 grams) grated peeled carrots (5 to 6 medium carrots)
1/2 cup (50 grams) coarsely chopped walnuts
Bake at 350 degrees Fahrenheit (176C) for 45-60 minutes.

Sugar Free Oil Free Eggless Chocolate Cake -
Ingredients:
Dates - 2 cups (350 gm)
Hot Milk - 1 cup
Oil- 3/4 cup
Curd - 1/4 cup
Whole Wheat Flour - 2 cups (300 gms)
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Salt - 1/4 tsp
Milk - 1/2 cup
Chopped/ grated Carrot - 1/2 cup
Chopped Dates and walnuts - a few
Method:
1. Soak dates in hot milk for 30 min.
2. Blend in dates and milk together to prepare dates puree.
3. Transfer blended mixture in a bowl. Add in oil and curd and wisk well. Sieve dry ingredients in same bowl.
4. Add in half cup milk in batter in batches to prepare smooth batter.
5. Transfer batter in a lined baking 8 inch baking dish. Sprinkle some Chocolate chips.
6. Bake at 180 degrees for 30-35 min until toothpick comes out clean.
7. Cut when cool.

Moist and Delicious Coconut Cake | Easy No Flour No Butter Coconut Dessert
i n g r e d i e n t s :
• 3 large eggs
• 1/2 cup (100 g) granulated sugar
• 1 tsp vanilla extract
• 1 cup (240 ml) heavy cream (33%fat)
• 2 1/2 cups (250 g) unsweetened (finely) shredded coconut (dry)
• A pinch of salt
• 1 tsp baking powder
Bake the cake at 350ºF/180ºC for 30-35 min.
I used a 9/23 cm square baking pan.
* The baking time and temperature are only a guide. As every oven is different, you may need to make adjustments to get the right result.

1 tbsp = 15 ml
1 tsp = 5 ml
