Chocolate Coke Cake With Icing For Two
This Chocolate Coke Cake With Icing For Two recipe is the perfect sized cake for an after supper snack! The combo of Coca Cola and chocolate in this cake is perfect.
Makes 1 - 6 cake.
Ingredients:
For the cake:
¼ cup (60 mL) unsalted butter, softened
¼ cup + 2 Tbsp (90 mL) sugar
1 egg yolk
½ tsp (2 mL) pure vanilla extract
½ cup (125 mL) all-purpose flour
1 Tbsp + 1 tsp (20 mL) unsweetened cocoa powder
¼ tsp (1 mL) baking soda
pinch salt
2 Tbsp (30 mL) buttermilk
¼ cup (60 mL) Coke (don't use diet)
For the Icing:
3 Tbsp (45 mL) butter
2 tsp (10 mL) cocoa powder
3 Tbsp (45 mL) Coke
1 cup (250 mL) icing sugar
¼ tsp (1 mL) pure vanilla extract
¼ cup (60 mL) chocolate chips
Method:
Preheat the oven to 350ºF (180ºC), and grease a 6 round cake pan.
Whisk together the flour, cocoa powder, baking soda and salt.
In another bowl, cream together the butter and sugar until fluffy.
Beat in the egg yolk then the vanilla and mix until combined.
Mix some of the Coke and buttermilk into the butter mixture, then mix in some of the flour.
Alternate until all ingredients are combined.
Scrape the batter into the cake pan, and bake for 25-30 minutes.
While the cake is baking, melt together the butter, cocoa, and chocolate chips.
As this is melting whisk in the Coke.
Once everything has melted together, remove from the heat and whisk in the icing sugar.
Set aside and allow to cool - it will thicken as it cools.
When the cake is fully baked, remove from oven and allow to cool to room temp before icing.

Coca-Cola Cake
2 sticks of oleo or butter
3 tbsp cocoa
1 c Coca-Cola
2 c sugar
¼ c buttermilk
2 eggs
1 tsp soda
1 tsp vanilla extract
1 ½ c miniature marshmallows
Bring butter, cocoa, and Coca-Cola to a boil, then pour over the flour, salt, and sugar. Add buttermilk, eggs, soda, vanilla, and mix well. Add marshmallows last. They will float to the top. Pour batter into a well-greased and floured oblong cake pan. Bake at 350°F for 45 to 50 minutes. Ice cake while hot.
Icing
1 stick of oleo or butter
3 tbsp cocoa
6 tbsp Coca-Cola
1 box confectioner’s sugar (16 oz)
1 c pecans
Heat to a boil the butter, cocoa, and Coca-Cola. Then add the confectioner’s sugar and pecans. If this is too thick add a spoon or two of water.
