Ingredients 1 cup oatmeal 2 each eggs 1 1/2 cup boiling water 1 1/2 teaspoon cinnamon 1/2 cup shortening 1 teaspoon soda 1 3/4 cup brown sugar 1/2 teaspoon salt 1 cup sugar 1 1/3 cup flour 6 tablespoon butter 1/3 cup cream, or evaporated milk 1 cup coconut & nuts (optional)
Directions: Cake: Mix and set aside oatmeal and boiling water. Mix remaining ingredients and add to oatmeal. Bake in 9x13 inch pan at 350 degrees for 30 to 35 minutes. Frosting: Mix 3/4 c brown sugar, butter, cream and coconut. Spread over cake after baking and broil until bubbling.

This old-fashioned oatmeal cake might not win any beauty awards, but one bite and it will instantly become a family favorite!
**INGREDIENTS**

1 1/2 cups hot water 1 cup old fashioned oats 1 cup brown sugar 1 cup white sugar 1/2 cup butter, at room temperature 2 eggs 1 1/3 cups all-purpose flour 1 teaspoon cinnamon 1 teaspoon baking soda 1/2 teaspoon salt
*Topping*
1/2 cup butter 1 cup brown sugar 1 tablespoon milk 1 cup coconut

FOR THE CAKE
- 1 cup old fashioned oats - 1 1/4 cups boiling water - 1/2 cup unsalted butter, room temperature - 1 cup white sugar - 1 cup light brown sugar - 2 eggs - 1 teaspoon vanilla - 1 teaspoon cinnamon - 1 teaspoon baking soda - 1/2 teaspoon salt - 1 1/2 cups flour
FOR THE FROSTING
- 1/2 cup butter - 1/2 cup light brown sugar - 1/4 cup heavy cream - 1 cup shredded coconut - 1 cup chopped pecans - 1 teaspoon vanilla - 1/2 teaspoon salt
FOR THE CAKE
Preheat oven to 350 degrees.
Pour boiling water over oats in a small bowl and let it steep two minutes.
While the oatmeal is steeping, cream the butter and sugars until light and fluffy, 3 minutes.
Add eggs and vanilla. Mix to incorporate and scrape the sides of the bowl to ensure even mixing.
Pour in slightly cooled oats and water and mix 1 minute.
Add cinnamon, baking soda, salt, and flour. Mix until there are no dry streaks.
Grease a 9x13 baking dish with nonstick spray and pour batter into dish.
Bake until set and a light golden color. A skewer inserted into the middle of the cake should come out mostly clean, 35-40 minutes.
While baking, prepare the frosting.
FOR THE FROSTING
Melt the butter. Add brown sugar, cream, coconut, nuts, vanilla, and salt. Stir together to combine and set aside until the cake is ready.
When the cake is removed from the oven, turn the broiler to high.
Evenly spread the prepared frosting over the hot cake. Place under broiler. Do not walk away as this is a very quick process. Allow the frosting to caramelize and turn golden brown, 1-3 minutes.
Remove from oven and cool for 15 minutes.
Oatmeal Cake with Broiled Coconut Topping Recipe ~ Noreen's Kitchen
Greetings! I want to share with you my family's special recipe for oatmeal cake with a broiled coconut topping. I affectionately call it Funeral Cake because my mom only ever made it when she needed to take something to a funeral. I had to laugh because I took it to her house for Thanksgiving dinner and she said that she had just made one to send to a funeral! How funny!
This cake is super moist and delicious. It is made with simple ingredients that you will have on hand and even in your food storage. Oatmeal, eggs, butter, flour, sugar, brown sugar, nuts, coconut and evaporated milk. It is simply delicious.
I make mine with double the topping. Mom says it's too much. I disagree! This is wonderful the day you make it or the next, but in my house this disappears fast so you better get you some or it will be gone!
This cake would be great for any occasion. Potlucks, office parties, get together's and of course funerals! You could make this and cut it into bars and divide it up on pretty plates, wrapped with cellophane and have a couple really nice neighbor gifts for Christmas!
