How To make Santa Fe Grilled Turkey
1 1/2 pounds Boned turkey breast half -- skinned
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/3 cup Lime juice
2 teaspoons Olive oil
2 cups Diced plum tomatoes
1/2 cup Chopped onion
3 tablespoons Minced fresh cilantro
1 tablespoon Minced fresh jalapeno pepper
2 tablespoons Red wine vinegar
Vegetable cooking spray
Place turkey between 2 sheets of heavy-duty plastic wrap, and flatten to= 1/2" thickness, using a meat mallet or rolling pin. Make several 1/4" deep=
diagonal cuts on 1 side of turkey in a diamond pattern. Sprinkle both sides with salt and pepper; place in a shallow baking dish.= Combine lime juice and oil; pour over turkey, turning to coat. Cover and= marinate in refrigerator 3 hours, turning occasionally. Combine tomato and= next 4 ingredients; cover and chill. Coat grill rack with cooking spray; place on grill over medium-hot coals. = Place turkey on rack, reserving marinade. Cook 7 minutes on each side or= until done, brushing occasionally with reserved marinade. Cut turkey into= thin slices. Serve with salsa. Makes 4 servings. Nutritional information= per serving: calories - 181, protein - 26.5 g., fat - 4.9 g., carbohydrates= - 7.3 g., cholesterol - 59 mg., sodium - 175 mg.

Rebecca in The Farm Stand Kitchen makes Santa Fe Turkey Burgers with Guacamole & Tex Mex Sauce
SANTA FE TURKEY SLIDERS ????
2 pounds ground turkey
4 teaspoons minced garlic
4 Tablespoons chopped cilantro
1 red bell pepper, chopped
2 jalapeños, chopped
4 teaspoons ground cumin
2 teaspoons chili powder
2 teaspoons salt
1 1/4 cups shredded Mexican cheese, or other cheese as desired
1 1/4 cups lightly crushed tortilla chips
25 slider buns
Lettuce leaves or spring mix
Guacamole
TEX MEX SAUCE
1 cup sour cream
3 Tablespoons mayonnaise
Juice of one fresh lime
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 cup chopped cilantro
Pinch of garlic powder
Salt and pepper to taste
LETS MAKE IT
Preheat oven to 375. Spray a half sheet pan with a light coating of non stick spray. Set aside.
In a large mixing bowl, add the first 8 ingredients. Stir to throughly combined. Transfer to the prepared pan. Pat out evenly. Bake for 30 minutes. Add the cheese and chips and bake just till cheese is melted. Remove from oven. Cut into squares that will fit on your slider buns.
TEX MEX SAUCE
Add all ingredients to a small bowl, stir to combine.
( this can be done while the sliders are baking)
ASSEMBLY:
Slider bun bottom
Tex mex sauce
Lettuce
Turkey burger ( 1 or make it a Dave Double!)
Guacamole
Top bun
You can add a long toothpick skewered through the top to hold it all together, especially the double!
Add a jalapeño slice on top if you would like!

How To Make The BEST Smoked Frogged Turkey For Any Occasion
Looking for a unique way to prepare and smoke your Thanksgiving Turkey? Try this frogged or bullfrog cut with your turkey! I like to call it an Alien Turkey. It's like spatchcock turkey, but better! It smokes up just as quick, but leaves you with the white meat on one side and the dark meat on the other making it easy to carve up what your family or guests want. Yes, it looks a little weird, or even alien (I mean, I am in New Mexico) but the end result is a fantastic tasting turkey! I also used a MeatStick 4x in the breast and a MeatStick Chef X in the thighs so that I smoked this bird to the perfect internal temperatures! @Themeatstick I used my Lonestar Grillz Pellet Grill at 325 degrees so that I had the perfect amount of smoke and maintained the perfect temperature, even while it dumped rain during this cook! @lonestargrillz Living here n New Mexico, we love our red and green chile! So, I used some red chile sauce for my binder, and brushed some more on a little over half way through, adding a super delicious flavor to the skin! Talk about YUM!
