Resep Beef Stroganoff (untuk 7-8 porsi)
Bahan marinasi:
500 gr daging has dalam
1 kuning telur
4 sdm tepung terigu protein sedang
2 sdm kecap inggris
½ sdt lada hitam
1 sdm minyak
Bahan lainnya:
2 buah bawang bombai ukuran sedang
250 gr jamur swiss brown
3 siung bawang putih
5 lembar bay leaf
3 sdm mentega tawar
200 ml cream / sour cream
1 sdm air perasan lemon atau 80 ml white wine / shake
1 sdm mustard, opsional
⅓ sdt garam
¼ sdt lada hitam
2 sdm saus tomat
2 buah pickled gherkins, opsional
500 ml air
1 batang seledri
2 sdt kaldu sapi bubuk
Parsley
Bahan mixed vegetables:
250 gr brokoli, rebus
250 gr wortel, potong, rebus
6 siung bawang putih, cincang halus
2 sdm minyak
¼ sdt garam
½ sdt lada hitam
1 sdm olive oil
Pelengkap:
Fettuccine
Langkah:
1. Pukul-pukul daging dengan rolling pin atau benda tumpul lainnya kemudian iris memanjang dan miring
2. Marinasi dengan kecap inggris, kuning telur, tepung terigu, lada hitam dan minyak, aduk rata. Diamkan selama 10 menit
3. Rebus pasta hingga matang lalu tuang sedikit minyak, aduk rata
4. Panaskan minyak, tumis bawang putih hingga wangi lalu masukkan wortel dan brokoli, aduk rata
5. Tambahkan garam dan lada hitam, masak beberapa saat lalu masukkan olive oil, aduk rata, sisihkan
6. Potong-potong jamur, iris bawang bombai, cincang bawang putih, iris pickled gherkins dan cincang parsley
7. Panaskan sedikit minyak, masukkan daging lalu masak hingga kecokelatan, sisihkan
8. Panaskan kembali sedikit minyak, tumis jamur hingga wangi dan layu lalu masukkan bawang bombai, masak hingga wangi
9. Masukkan bawang putih, bayleaf, seledri, mentega, daging , pickled gherkins, parsley, perasan lemon, mustard, saus tomat, air, kaldu sapi bubuk dan cream, masak beberapa saat
10. Tambahkan garam dan lada hitam, masak sesaat
11. Beef stroganoff siap disajikan dengan fettuccine dan sayuran sebagai pelengkap

Beef Stroganoff Recipe (yield 7-8 servings)
Marinade ingredients:
500 g beef fillet
1 pc egg yolk
4 tbsp all-purpose flour
2 tbsp Worcestershire sauce
½ tsp black pepper
1 tbsp oil
Other ingredients:
2 pc onion, medium
250 g swiss brown mushroom
3 clove garlic
5 pc bay leaf
3 tbsp unsalted butter
200 ml cream / sour cream
1 tbsp lemon juice or 80 ml white wine / sake
1 tbsp mustard, optional
⅓ tsp salt
¼ tsp black pepper
2 tbsp tomato sauce
2 pc pickled gherkins, optional
500 ml water
1 pc celery
2 tsp beef powder
Parsley
Mixed Vegetables ingredients:
250 g broccoli, blanched
250 g carrot, sliced, blanched
6 clove garlic, minced
2 tbsp oil
¼ tsp salt
½ tsp black pepper
1 tbsp olive oil
Add-ons:
Fettuccine
Steps:
1. Pound the beef with a rolling pin or other blunt objects. Slice diagonally.
2. Marinade with Worcestershire sauce, egg yolk, flour, black pepper, and oil. Mix well and marinade for 10 minutes.
3. Boil the pasta. Once cooked, add a bit of oil and mix well.
4. Heat some oil. Sauté the garlic until fragrant, then add carrots and broccoli. Stir.
5. Season with salt and black pepper. Cook for a moment, then add olive oil. Stir and set aside.
6. Slice the mushroom, onion, pickled gherkins, and parsley. Mince the garlic.
7. Heat some oil. Add the beef in and cook until browned. Set aside.
8. Add more oil and heat it up. Sauté the mushroom until fragrant, then add onion. Cook until fragrant.
9. Add garlic, bay leaf, celery, butter, beef, pickled gherkins, parsley, lemon juice, mustard, tomato sauce, water, beef powder, and cream. Cook for a moment.
10. Season with salt and black pepper. Cook for a moment.
11. Beef Stroganoff is ready to serve with fettuccine and vegetables.

Beef Stroganoff Rice in Hong Kong style !????
Beef Stroganoff????is a Russian dish of course. However, we recreated it in our own Hong Kong Style in 1950s to make it a very classic and unique dish in Hong Kong soy sauce Western cuisine. This Beef stroganoff indeed has no linkage with Russian at all. It is 100% old Hong Kong Style cuisine from 1950s.
It was made from beef slice, different bell pepper slice????, cucumber pickles slices????and rich steak sauce made from soy sauce , tomato paste????and beef broth . I always love this dish when I was a little girl. This is one of my favourite including the baked pork rice and minced beef rice. I ordered them in turns when I visited the old Hong Kong style Western Cafe during my childhood. Nowadays, not many Hong Kong Tea Houses have this dish in their menu. Therefore, I would like to recreate this recipe to share with all of you. It is worth to preserve such recipes and also our food culture of Hong Kong.
Russian Beef with Rice (old Hong Kong Style)
1 onion
3 clove garlic
1 bell pepper
1/2 green bell pepper
2 pickled cucumber
1 sirloin steak
3-4tbsp flour
Seasoning:
1tbsp soy sauce
1/2tbsp sugar
1/2tbsp potato starch
1tbsp oil
2-3tbsp water
