German Beef Rouladen Recipe + Homemade Spaetzle
This amazing beef rouladen is stuffed up with mustard, pickles, and onions and served with a delicious easy to make beef gravy. You will love how simple this is to prepare and just how flavorful it is.
Rouladen is a classical German recipe consisting of thinly sliced and pounded out beef that is stuffed with salt, pepper, mustard, bacon, onions, and pickles. You sear the beef and then simmer it in a flavorful beef sauce until it is tender.
This is a recipe I used to make at one of the restaurants I worked at when we had a lot of leftover chunks of meat. It’s easy to make and it really packs a punch in the flavor department, however, you will need to allow some time for them to cook in the oven.

Ingredients for the Rouladen:
For the Rouladen:
• 2 pounds top round beef, cut into 8 large slices
• 1/3 cup Dijon or German mustard
• 8 slices of bacon, cut in half
• ½ peeled and thinly sliced yellow onion
• 5 small-medium size pickles, julienne
• salt and pepper
For the Sauce:
• 2 thinly sliced leeks
• 1 peeled and large diced yellow onions
• 2 peeled and large diced carrots
• 2 large diced celery stalks
• 6-8 parsley stems with leaves
• 2 tablespoons tomato paste
• 1 cup cabernet sauvignon wine
• 4 cups beef stock
• 2 tablespoons unsalted butter
• salt and pepper to taste
• 2 tablespoons of red currant jelly, optional
Ingredients for the Spaetzle:
• 3 cups all-purpose flour
• 5 large eggs
• ¾ cup water
• 1 teaspoon salt
• ¼ cup unsalted butter

In this recipe i'll cooked one of the famous food here in germany a Beef Roulades or Rinderrouladen a thin beef meat wrapped into some vegetable on it.
Ingredients
1kl Beef roulades
Mustard
carrots
onion
bacon
Salt
Black Pepper
Tomato paste
Red wine
Pickles cucumber
beef powder
procedure
Lay the beef roulades season with salt and black pepper.
Spread the mustard on the top , add the chopped bacon, onion, carrots and pickles cucumber. After that seal it completely as possible. In other side heat the pan and pour the cooking oil and fry slightly in all both side. then set aside.
In other side fry the other ingredients like onion ,carrots and add the tomato paste to get more taste and last add the 3 cups-4 cups of beef powder liquid and bring to boil for about at least 2 hours in slow cooking.
After cooking for 2 hours seperate the meat to the boiled soup in other pot and sieb the tasty soup to the cooked ingredients.
The boiled soup add the 10 grams of butter and dissolve it.
dissolve the cornstarch in a water and add to the soup to become thick and consistent.
depend how many cornstarch you want to add to get more thicken sauce.
for the side dish : just bring boil the water and cook the Potato, carrots and green peas.
serve with a sauce,

INGREDIENTS
2 1/2 lbs lean high-quality beef round steak, cut into 8 equal rectangular sections and paunded
flat
3 tablespoons yellow mustard
salt and pepper, to taste
3 slices bacon,
3 slice of pickle
cups hot water, to cover (beef broth or beef granulate)
2 tablespoon flour or corn starch to thicken the gravy
3 wooden toothpick
1/4 cup oil, for frying
1 small size onion (chop or slice)
DIRECTIONS
Spread 1 tablespoon mustard evenly on one side of each pounded steak.
Sprinkle salt and pepper over mustard.
then put the bacon and pickle
Roll up firmly jelly roll fashion (with filling to inside, starting at narrow end), and secure each rouladen shut (so filling stays in) with wooden toothpicks
Heat the pan/ cooking oil over medium-high heat. When hot, carefully add the rouladen rolls rogether with onion. Fry until nicely browned, turning once (about 7 minutes per side).
Add enough water or broth to almost cover the rouladen. Increase heat to high and bring to a boil.
Cover and reduce heat to low.
Simmer, covered, for 1 1/2 hours on low heat, checking once halfway through to give a stir and see that meat is covered with sufficient liquid (you may add a little hot water at this point, if necessary).
To Make Gravy:
Add the flour to 1 cup of water in a large measuring cup, whisking briskly with a fork to blend.
Pour the flour mixture all at once into the hot broth, using a wire whisk to blend. Use a wooden spoon to scrape up any brown bits from the bottom of the pan, and stir them into the gravy.
Increase heat to medium-high, and bring gravy mixture to a boil, whisking constantly. Continue to whisk and boil for two to three minutes, until gravy thickens. Reduce heat to low, and remove the bay leaf. Adjust seasoning to taste.
Note: Remove toothpick before serving
