Hinoki Steamed Beef and Vegetables | 편백찜
This dish is very popular and usually served in hot spring resort places in Japan. In fact, I first tasted this in Obama, Japan several years ago. Famous for its natural hot springs, you can buy the fresh vegetables, seafood and meat at a neighborhood store and have them steamed over the sulfurous hot spring. Then, you can eat them right there overlooking the ocean with a cold glass of beer. Very simple, very tasty and one of the best meals you will have in Japan.
There are now many restaurants in Korea that specialize in this type of Hinoki steamed dishes. You can have beef or pork slices with a wide variety of vegetables. You can add shrimp and shellfish as well as clams and calamari. As we like this so much, I even bought a special steamer made with hinoki wooden boxes. However, you can also use bamboo steamers or even regular stainless steel pots.
In terms of the ingredients, I would recommend that you ask for the shabu shabu cut of beef. It will shorten the time required to cook the meat and it will be very tender and lower in fat. Mung bean sprouts are absolutely the best as it keeps crunchiness and will add to the texture and flavor. You can also steam various seasonal vegetables of your choice. In fact, this is a very efficient way to clear out all the vegetables in the refrigerator. Just be aware that hard vegetables such as carrots, sweet potatoes and potatoes will require longer steaming time.
As for the dipping sauce, you can use store bought prepackaged sauces. I am using Thai Sweet and Spicy sauce and the Japanese sesame dressing. For the soy dipping sauce, I mixed low sodium soy sauce with some of my Yuzu essence. You can also use low sodium soy sauce with wasabi or hot mustard. You can make your own or buy the premade sauces. Be creative and adventurous. It is always fun and exciting to try a different combination of flavors and test which sauce fits best.
