Rice Cutlet
Ingredients
1 cup Cooked Rice, leftover
1 medium Potato, boiled
1 small Onion
3 tablespoon Gram Flour (Besan)
1 inch Ginger, grated
2 Green Chillies
2 tablespoon Coriander Leaves
Salt, to taste
1/4 teaspoon Coriander Powder
1/4 teaspoon Turmeric Powder
1/4 teaspoon Chilli Powder
1/4 teaspoon Garam Masala
1/4 teaspoon Cumin Powder
1/4 teaspoon Chaat Masala
Oil
Bread Crumbs

Leftover Rice Tikki | Sanjeev Kapoor Khazana
A delicious snack made using leftover cooked rice.
LEFTOVER RICE TIKKI
Ingredients
1½ cups leftover cooked rice
3 tbsps oil
2 green chillies chopped
1 large onion, chopped
1 medium carrot, grated
¼ cup chopped French beans
3 tbsps boiled and mashed green peas
Salt to taste
1½ tbsps semolina
1 tsp red chilli powder
½ tsp garam masala powder
Tomato ketchup to serve
Method
1. Heat 1 tbsp oil in a non-stick pan, add green chillies and onion. Sauté till onion turns translucent.
2. Add carrot, French beans, green peas and salt. Mix well. Sauté for 2-3 minutes on medium heat.
3. Take leftover rice in a bowl. Add the cooked mixture and mix well. Add semolina, salt, red chilli powder and garam masala powder. Mix well. Divide mixture into equal portions and shape each portion into medium sized tikkis.
4. Heat remaining oil in a non-stick tawa, add tikkis and shallow fry on medium heat till golden brown on both sides.
5. Serve hot with tomato ketchup.

Fried Rice Cakes Recipe | The Sweetest Journey
Learn how to make delicious fried rice cakes with a few simple ingredients.
Ingredients
2 1/2 Cups Brown Rice, Cooked & Cooled
2 Eggs
1 Tablespoon Soy Sauce
1/2 Teaspoon Ginger Paste
1 Tablespoon Dried Parsley Flakes
1/2 Cup Green Onions, Sliced
1 Garlic Clove, Chopped
1-3 Tablespoons Vegetable Oil
Directions:
Cook 1 cup of rice according to package instructions without using any butter. The final amount of rice should be about 2 1/2 cups. Let cool completely.
In a large bowl, whisk the eggs. Add the soy sauce and ginger and mix together. Add the parsley, green onions, and garlic and stir until combined. Add in the rice to this mixture and mix until the rice is fully coated.
In a large skillet, heat 1 tablespoon of vegetable oil. Spoon the rice mixture onto the pan and form into circular cakes about 3-4 inches in diameter. Cook for 3 minutes on each side or until golden brown. (Add more oil one tablespoon at a time if necessary.) Repeat the process with the rest of the rice mixture.

For the rice bun:
1 cup warm cooked rice
½ pack seaweed snacks (about 5-6 sheets)
1 tsp sesame oil
Sesame seeds
For the fillings:
2 eggs, scrambled with ½ tsp soy sauce
1 small avocado
Optional: bacon, kimchi, pickled radish or any pickle of your choice
For the spread:

Chopped Ginger - 1 tsp
Chopped Garlic - 1 tsp
Chopped Green Chili - 1 tsp

Grated Carrot - 1 no
Chopped Mint leaves
Chopped Coriander leaves
Turmeric powder
Salt
Chili powder - 1 tsp
Cumin powder - 1 tsp
Garam masala - 1/2 tsp
Lemon - 1 no
Ghee
Oil

Method:
1.Take a bowl, add 1 whole cup of Cooked rice, some finely chopped Onions, some Chopped Ginger, Chopped Garlic, Chopped Green Chili, Medium sized Grated Boiled Potato, 1 small Grated Carrot, some Chopped Mint leaves and some Chopped Coriander leaves.
2.Now, add series of spices - Season it with some salt, a pinch of Turmeric powder, 1 tsp of Chili powder, 1 tsp of Cumin powder, 1/2 tsp of Garam masala and Juice of 1 Lemon.
3.Mix everything together and mash it well with your hand.
4.Grease your hands with Ghee or Oil, roll them into small patties.
5.Take a wide sauce pan and Pour some Oil, Shallow fry the Rice Patties till it gets golden brown.
Yummy and healthy Rice Cutlets are ready to serve.
