Written recipe for Authentic Punjabi rajma

Serves: 6-8
Ingredients:
• Rajma (kidney beans) 1 cup
• Water as required
• Salt to taste
• Onions 3-4 medium size (sliced)
• Oil 50 ml (4 tbsp)
• Ginger garlic paste 2 tbsp
• Tomato puree of 4-5 medium size
• salt to taste
• turmeric powder 1/4th tsp
• coriander powder 1 tbsp
• Red chilli powder 1 tbsp
• Garam masala 1 tsp
• Kasuri methi 1 tsp
• Fresh coriander 2 tbsp (chopped)
Methods:
• Rinse the rajma with water thoroughly. And soak it in fresh water for 5-6 hours or overnight. After soaking, drain the excess water and keep aside for cooking.
• Set a cooker on medium heat, and add the soaked rajma, add water and fill up to 2 inches above the rajma surface, add salt and pressure cook on medium heat for 3 whistles. Switch off the flame and let the cooker depressurize naturally to open the lid.
• Set a deep pan or wok on medium heat, add oil and onions, cook until the onions are brown, keep stirring while cooking the onions.
• Remove the fried onions on absorbent paper and cool down to room temperature.
• Transfer the fried onions to a grinding jar and grind to a fine paste, use water as required.
• Set the same pan and reuse the oil that was used earlier for frying onions, add ginger garlic paste and sauté for few minutes.
• Add tomato puree, salt to taste, stir well, cover and cook for 5-6 minutes, while stirring in intervals.
• Add turmeric powder, coriander powder and red chilli powder, mix well and add the onion paste and cook well for about 15-20 minutes and while stirring in intervals.
• Add the precooked rajma along with its water, mix well and cook well for 15-20 minutes.
• Add salt to taste, garam masala, kasuri methi and freshly chopped coriander leaves, stir and mix well. You can add hot water if required and adjust the consistency of the gravy depending on how thick or thin you want it to be.
• Your authentic Punjabi rajma is ready to be served, serve hot with steaming hot rice and some paratha or roti as per your preference.

Punjabi Rajma Masala Recipe:
Red Kidney Beans (Rajma) - 2 Cups
Water - As Needed + 5 Cups
Bay Leaf - 1 no
Cinnamon - 1 inch
Salt - To Taste
Ghee - 3 tbsp
Dried Red Chilli - 2 nos
Cloves - 3 nos
Black Peppercorns - ¼ tsp
Cardamom - 3 nos
Cumin Seeds - 1 tsp
Onion - 2 nos
Tomato - 3 nos
Ginger Garlic Paste - 2 tbsp
Green Chilli - 2 nos
Coriander Powder - 1 tsp
Cumin Powder - 1 tsp
Red Chili Powder - 1 tsp
Turmeric Powder - ½ tsp
Garam Masala - 1 tsp
Kasuri Methi - 1 tbsp
Coriander Leaves - 1 tbsp
Cooking Instructions:
1. Add Rajma and water in a bowl and soak the Rajma for 8 hours to overnight.
2. Drain the soaked rajma and wash it once more with fresh water.
3. Pressure cook the washed rajma with 5 cups of water, bay leaf, cinnamon stick and salt for 10 whistles.
4. Once the pressure settles, keep the cooked rajma with the water in which it had been cooking aside.
5. Blend onions in a mixer grinder to make onion paste.
6. Blend the tomatoes in a mixer grinder to make tomato puree.
7. Heat 3 tbsp of ghee in a pan, add dried red chilli, cloves, cardamom, cumin seeds and black peppercorns and saute for a minute.
8. Add onion paste and saute until they turn into light brown colour.
9. Add chopped green chillies.
10. Add the ginger-garlic paste and saute for a couple of minutes.
11. Add coriander powder, cumin powder, turmeric powder, red chilli powder and salt and cook for 2 minutes.
12. Add the tomato puree and continue cooking for 5 mins or until the oil separates from the masala.
13. Add cooked Rajma with the water in which it has been cooking.
14. Add garam masala powder, Kasuri methi and coriander leaves and cook for 10 mins or until the gravy reaches the desired consistency.
15. Remove from the heat, and serve hot with steamed rice or chapati.

Rājmā or Rāzmā is a vegetarian dish, originating from the Indian subcontinent, consisting of red kidney beans in a thick gravy with many Indian whole spices, and is usually served with rice. Although kidney beans did not originate from the Indian subcontinent, it is a part of regular diet in Northern India. The dish developed after the red kidney bean was brought to the Indian subcontinent from Mexico. A 100 gram serving of boiled Rajma beans contains about 140 calories, 5.7 grams of protein, 5.9 grams of fat, and 18 grams of carbohydrate. Rajma Chawal is kidney beans served with boiled rice.
Some of the best Rajma is said to be grown in the north Indian state of Himachal Pradesh, Uttarakhand, and the Jammu region of Jammu and Kashmir. Rajma Chawal served with chutney of Anardana is the famous dish of Peerah, a town in Ramban district of Jammu & Kashmir, and Assar/Baggar in Doda district of Jammu & Kashmir. Going further, the Rajma of Chinta Valley in Doda district, a short distance from the town of Bhaderwah of Jammu province are said to be amongst the most popular.
The combination of Rajma and rice generally lists as a top favorite of North Indians and Nepalis. Rajma is prepared with onion, garlic, and many spices in India, and it is one of the staple foods in Nepal. |
