Sprouting Recipe ((उमार्ने विधि) -Excellent source of Nutrients, weight loss, building body muscles
SPROUTING (उमार्ने) FOR KWAANTI (क्वाँटी ) OTHER DELICIOUS RECIPES
In Nepal, Mixed sprouted beans are known as Kwaanti (क्वाँटी). People make a delicious stew like soup during thefestival called Janai Purinma, in Nepal.
Traditionally, the sprouts are prepared from 9 different types of beans with a set ratio. You may find the mixed beans for kwaanti in the international market for example Nepalese groceries.
However, people have their own variation of beans and ratio and don’t wait for festival time to enjoy it.
Why Sprouts are good for our health
• In general, Soaking and sprouting activates and multiplies nutrients (particularly Vitamins, A, B, C, neutralizes enzyme inhibitor and promotes. the growth of vital digestive system.
• Significant amount of protein and dietary fibre, multiple vitamins, folate and minerals (Iron, Zinc, Magnesium,Manganese) and so on
• Boost the metabolism.
• Prevent anemia, aid in the weight loss
• Lower cholesterol, reduce blood pressure.
• Boost skin health and immune system.
• Improve vision and so on.
Here is my variation of beans and other seeds
INGREDIENTS
3+ 1/2 cups dried mixed beans (chickpeas, peas, mung, brown and white soybeans, kidney beans, black eyed beans, black lentils) and 2 tablespoons fenugreek seeds (Note: This is just a general guidance. When beans are soaked, they swell to double in size. So you can add or take out beans or other seeds as you wish, of course the quantity too.
EQUIPMENT
A good size bowl
Colander or porous container
Cheese clothes or lid
METHODS
• Wash and rinse under running water until the water is clear.Remove any debris.
• Drain thoroughly.
• Soak in water for 10-12 hours. As a rule of thumb, 1 cup of mixed beans requires 4 cups of water.
• Next Day-Rinse and drain the soaked beans thoroughly.
• Place in a colander or porous container with a cover for sprouting and keep in dark place and at room temperature.
• Rinse to keep beans moist twice a day for 3-4 days until sprouts are about 1cm long.
• By the third or fourth day, it is ready to consume.
SAFETY TIPS FOR SPROUTING
• Sprouts like any fresh live food, carry a risk of foodborne illness if they are contaminated.
• The warm, moist conditions required to grow sprouts are ideal for the rapid growth of bacteria such as Salmonella, Listeria and E-Coli.
• Use quality seeds even certified organic seeds if possible.
• Wash your hands and clean the equipment before handling seeds and sprouts.
• Rinse the seeds under running water thoroughly before soaking and during sprouting.
• Refrigerate finished sprouts at 5 °C or below and consume within 2-3 days.

Broccoli is a vegetable full of mineral salts and vitamins, but did you know that by cooking them in abundant water they lose all their nutrients?
Rich in calcium, iron, vitamin C and B, it's effective in cancer prevention, reducing cholesterol and diabetes prevention, but by letting it boil for a long time, we lose the most important substance the anti-tumor substance called glucosinolate
According to two researchers of the University of Warwick boiling food has the worst impact on it, causing the loss of beneficial substances. But if you are thinking of using the cooking water to salvage its properties: DON'T DO IT!
During the cooking process, pesticides are also transferred to the water, unless you buy some untreated vegetables
So how can you cook some excellent broccoli without giving up its anti-inflammatory and anti-cancer properties? SIMPLE!
Here are two alternative ways to cook them without losing the benefits:
STEAMING
Steam cooking is best way because it preserves the bright green color and all the properties of broccoli.
But be careful not to go overboard with the time: 5 minutes is enough.
In fact the loss of vitamins is also due to the prolonged heat from cooking.
It is therefore preferable to choose methods that have a short cooking time.
MICROWAVE COOKING
It's the easiest way to cook it!

SUGAR FREE 3 BEAN SALAD!! AN UPDATED CLASSIC!!
Today we are revisiting a classic favorite! Over the years I have shared a couple bean salad recipes but in our house we always go back to the classic three bean that we know and love! This is a favorite of Rick and myself and truth be told, if he had his drothers, this would always be in the fridge for him to snack on! Dressed with a sweet and tangy dressing this salad is easy to eat and super easy to toss together! Perfect as a side for a sandwich or any meal really, this is even perfect to share and take to a gathering, barbecue or potluck supper! This is a nostalgic, classic salad that so many people love even if they forgot how much they did!
This salad starts off with a few canned items straight from the pantry shelf then adds in some fresh items from your garden or fridge. Canned green beans are easy to source and delicious. Canned wax beans may be a little more difficult to find, but they are usually available in better grocers or smaller independant stores. I can never get them at Walmart but always find them at my local Harris Teeter, which is a Kroger branded store. So look around and if you can find them use them. They are going to be about twice or even three times the price of the green beans, and if you are not wanting to spend the extra, simply use another can of regular green beans and make this a two bean salad. Next up are some dark red kidney beans that have been drained and rinsed. If you prefer another type of bean then swap these out for butter beans, lima beans or Cannellini beans if that is your preference! If you want to make this a five, six or 12 bean salad than go for it! Just be sure to add more dressing if you add more beans.
The dressing here is sweet and tangy. I used Splenda in place of sugar, but you can feel free to use granulated sugar, honey, agave or the sweetener of your choice to make this. Some apple cider vinegar, vegetable oil and a bunch of flavorful seasonings go in and turn themselves into a delicious dressing that you know and love!
The fresh veggies really make this salad and add the necessary crunch that you love. Bell peppers of all colors, some diced onion and celery round out the recipe. Toss everything together with the dressing and you have magic in a bowl! This will take you back to your grandmother's table. I know that my Nanny is where I got my love for this salad! She always had it in her fridge and we loved it next to just about everything, especially in the summer months.
This is a cool and refreshing, quick to make salad that relies on pantry staples that you will love. This comes together with fresh veggies from your garden or your grocer and you are going to fall in love with this all over again if it has been a while since you had some. If you have only had three bean salad out of a can or jar, then you are in for a real treat! I hope you give this a try sometime soon and I hope you love it!

TURKISH BEAN SALAD (Piyaz)
INGREDIENTS:
* 2 small canned beans (kidney bean and white beans)
* VEGETABLES TO BE CHOPPED: 2 tomatoes, 5-6 colored bell peppers, 1/2 green pepper, 1 red onion, 1/2 bunch of scallion, 1/2 bunch of parsley
* A little extra virgin olive oil
* 1 lemon juice
* 1_4 cup.Pomegranaye Syrup
* A little apple cider vinegar
* 1/2 teaspoon of salt
* 1/2 teaspoon of black pepper
* 1/2 teaspoon ofSumac
* 1/2 teaspoon of parsley flakes
