Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law – Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!

Grilled Cheese & Roasted Tomato Soup
Good soup ????
Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

Once a year I get a craving for these savory, satisfying cowboy beans. THESE ARE DELICIOUS ALL YEAR-ROUND. Loaded with meat, veggies, triple beans, great spices and slow cooked...they really hit the spot. Recipe follows.(:
COWBOY BEANS:
1 15-ounce can pork & beans
1 15-ounce can light red kidney beans, rinsed and drained
1 15-ounce can great northern or cannellini beans
1 cup cooked ground beef*
1/2 cup water
1/4 to 1/3 cup brown sugar
1/3 cup EACH diced red, green and yellow peppers
1/2 cup diced onion
2 small garlic cloves, chopped fine
2 slices bacon, diced
2/3 cup ketchup
2 tablespoons Worcestershire sauce, or to taste
2 tablespoons yellow mustard, or to taste
1/2 teaspoon red pepper flakes, optional
salt & black pepper, to taste
Combine the beans, ketchup, mustard, Worcestershire sauce, pepper flakes, ground beef, and water in large oven proof bowl. Fry the bacon crisp and set aside. Sautee the peppers, onions and garlic in the rendered bacon fat. Add the bacon, peppers, onion and garlic to the beans. Stir to combine. Cover with foil and bake in 325F oven for 1 1/2 to 2 hours, or until thick and bubbly and flavors are well blended. Stir once or twice. Taste for seasoning and add salt and pepper, if desired.
* cook 1/2 pound of fresh ground beef, if desired.
I used the leftovers to make chili soup by adding one 8-ounce jar of home canned tomatoes, a heaping teaspoon of taco seasoning and vegetables like green beans and corn. I topped it with some grated Parmesan cheese.
