Ingredients
For the kebabs:
2 pounds (1kg) ground lamb
1 onion, finely chopped
4 garlic cloves, grated
2 roasted red bell peppers, chopped
1/4 cup yogurt
2 teaspoons salt or to taste
freshly cracked black pepper, to taste
2 teaspoons cumin powder
1 teaspoon crushed red pepper flakes
1 teaspoon ground coriander seeds
2 teaspoons sweet paprika
2 teaspoons dried fenugreek (optional)
1/4 cup finely chopped fresh parsley
For the Yogurt Sauce:
1 cup plain yogurt
2 tablespoons fresh lemon juice
1 garlic clove, grated
salt, to taste
freshly cracked black pepper, to taste
sumac
Serve with:
pita bread
tomato, onion, mint salad (see video)
Instructions
Make the yogurt sauce: Combine all of the ingredients together except for the sumac. Whisk together. Sprinkle sumac over the top and chill in the refrigerator.
Make the Salad: Finely chop the onion and add to a bowl. Slice grape tomatoes in half and add them to the bowl with some finely chopped mint. Season with salt and drizzle some vinegar and olive oil over top. Toss and refrigerate.
Make the kebabs: Finely chop the onion in a food processor and add it to a large mixing bowl along with the ground lamb.
Add the parsley and garlic to the food processor and pulse until finely chopped then add it to the mixing bowl.
Add all of the remaining ingredients to the bowl and knead the mixture well.
Drizzle some oil over your hands and divide the kebab mixture into 16 portions. Form them into kebabs.
Heat a large skillet over medium-high heat and add enough olive oil to coat the pan. Cook the kebabs until golden all around. 6-8 minutes.
Transfer the kebabs into a platter.
Toast the pita and top it with the salad and yogurt sauce and then with kebabs. Kali Orexi!
Notes
Ground meat options: These kebabs can be made with half ground lamb and half ground beef for milder flavor. The meat should be 80% lean and 20 %fat for maximum juiciness and flavor.

The SHISH TAOUK Marinade Recipe you NEED to Try! Easy Chicken Skewers with Yogurt, Garlic and Lemon!
In this video, we show you how to make Shish Taouk, which is a popular Chicken Skewers dish in the Middle East and Turkey. Shish Taouk (also spelt as Sheesh Tavuk, Tavuk Şiş or Shish Tavuk) translates to Chicken Skewers, and is comprised of tender, juicy chicken cubes with a delicious marinade. There are many variations of the Shish Tavuk recipe, however, they all have yogurt, lemon and garlic as the main components. Ideally, sheesh tawook should be cooked on the BBQ for the authentic barbecue BBQ flavour, however, today we show you how you can easily make this at home on a grill pan. You can serve these delicious and easy chicken skewers with some salad, pita bread or vermicelli rice (you can view our vermicelli rice recipe here:
To make this Chicken Sheesh Tavuk recipe, you will need:
3 chicken fillets cut into cubes
3 tablespoons olive oil
2 tablespoons yogurt
1 tablespoon tomato puree
salt to taste
1/2 teaspoon black pepper
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon red pepper flakes
half teaspoon cumin powder
four to five grated garlic cloves
juice of half a lemon
Optional: tomato, green and red pepper for grilling
The Chicken Skewers are best cooked on a the BBQ, but you can also cook it on the grill pan then add some coal in a little oil and cover with foil for a couple minutes just before serving to replicate the authentic smokey charcoal flavour.
This Chicken Sheesh marinade is very easy to prepare and packed full of flavour. The yogurt and olive oil help to keep the chicken tender and juicy. The Lemon and Garlic, as well as the spices give the most wonderful flavour profile to this chicken marinade.

Delicious Turkish Kebab Recipe with Yogurt and Crispy Potatoes ❤️????
Join us as we bring to life a mouthwatering Turkish Bodrum Çökertme Kebap recipe with crispy potatoes, yogurt and tomato sauce. A treat for your taste buds that is not to be missed!
ÇÖKERTME KEBAB
Ingredients:
* 1 onion, grated and turned into a puree, strain it through a sieve and collect the onion juice in a bowl.
* 300g single-ground beef (döş) minced meat
* 1.5 tablespoons yogurt
* 1 tablespoon milk
* Reserved onion juice
* 3 sprigs of fresh thyme
* 1 teaspoon red pepper flakes
* 1 teaspoon ground black pepper
* 1.5 teaspoons salt
For potato straws;
* 2 potatoes, cut into matchstick-like pieces
* 2.5 tablespoons cornstarch
* 1 teaspoon salt
* Oil for frying
For garlic yogurt sauce;
* 6 tablespoons yogurt
* 2 cloves of garlic, crushed
* 1 teaspoon salt
* Optional: A pinch of black pepper
For tomato sauce;
* 1 tablespoon olive oil
* 1 tablespoon butter
* 1 pack of tomato puree
* 1 heaped teaspoon sugar
* 1 teaspoon salt
* 1 teaspoon black pepper
Directions:
1. In a mixing bowl, combine the grated onion, minced beef, yogurt, milk, reserved onion juice, fresh thyme, red pepper flakes, black pepper, and salt. Knead the mixture for 2 minutes until well combined.
2. Place the parchment paper on a flat surface with the long side facing you. Put the meat mixture in the center of the parchment paper. Wrap the paper around the meat and squeeze the edges to form a large roll, resembling a giant candy. Refrigerate for 2 hours to allow the yogurt and spices to infuse the meat. Then, transfer to the freezer and let it rest overnight.
3. Once frozen, you can take it out and slice it thinly whenever you want to cook it.
4. For the potato straws, soak the matchstick-cut potatoes in icy water for 10-15 minutes, then drain them. Add cornstarch and salt to the potatoes and mix well. Fry the potatoes in hot oil until golden brown, resembling mücver (fritters).
5. For the garlic yogurt sauce, mix yogurt with crushed garlic, salt, and optionally black pepper in a bowl.
6. For the tomato sauce, melt olive oil and butter in a small saucepan. Add tomato puree, sugar, salt, and black pepper. Simmer the sauce for 4-5 minutes.
7. In a preferably ceramic pan, melt 1 teaspoon of butter and place the frozen kebab slices in a single layer, covering the bottom of the pan. Cook the kebab, turning it over until it is well browned for a more flavorful result.
8. Arrange the fried potato straws on a serving plate. Top with garlic yogurt sauce. Place the kebab slices on top, and don't forget to add the remaining fat from the pan for enhanced flavor. Finally, pour the tomato sauce over the kebab and serve.
