YAY!!! Marinated mushrooms are becoming my new fave thing :)
Marinating mushrooms:
Slice a bunch of mushrooms and add to a bowl
Use lemon juice (and coconut aminos is optional) as the marinade (OR LIME!! You could add Mexican spices too for a fiesta flavour!)
Add chopped green onions, leeks, garlic or anything you want to marinate with the mushrooms!
For spices you can use red pepper flakes, black pepper, dill, smoked paprika, really anything you feel like! :) Switch it up and try different combos!
MARINATE mushrooms in a SUNNY SPOT on the counter for a few hours. The longer you marinate the better they get! You can also put them in the dehydrator, but the sun marinated ones are epic!!! I marinate for roughly 2, sometimes 3 hours - just depends on my day.
Dressing:
Twist on my classic french. This one is spicy so you might need to use less spice!
About 5-6 dates and about 3/4 cup water - depending on how thick or thin you like your dressing. Adjust as you blend
Garlic, cumin, mustard powder, red pepper flakes and smoked paprika for spices - adjust to taste!
Sprig of green onion and a few cherry tomatoes!
Blend and again - adjust spice and water to your own desire.
Salad:
Anything you want!
I start with half a head of red leaf lettuce chopped followed by 3 mini cucumbers, celery and cherry tomatoes! Add anything else you want!
Add the mushrooms and dressing. Mix and enjoy!! xox

Oyster Mushroom Stir Fry Chinese Style
Here is an easy vegetarian dish, Oyster Mushroom Stir Fry. If you like mushrooms, you will like this!
For a vegan recipe, substitute oyster sauce with Vegetarian Mushroom Flavoured Sauce.
Ingredients:
300g oyster mushrooms
15g carrots
1 stalk spring onion
2 cloves garlic, roughly chopped
2 Tbsp oil
Seasoning:
1 tsp soy sauce
1 tsp oyster sauce (use Vegetarian Mushroom Flavoured Sauce for a Vegan recipe)
Dash of pepper

Ingredients:-
10 button mushrooms (peeled and stems separated)
For marination:-
2 tbsp. Curd
1 tbsp. Gram Flour
½ tsp. Raw mango powder (Aamchur Powder)
½ tsp. Coriander Powder
1 tsp. Red Chilli Powder (Use Kashmiri Red Chilli Powder for the desired colour)
2 pinches Turmeric Powder
½ tsp. Garam Masala
1 tsp. Ginger Paste
1 tsp. Garlic Paste
Salt to taste
For stuffing:-
1 tsp. Oil
½ Onion, finely chopped
½ Capsicum, finely chopped
Mushroom Stems, roughly chopped
1 Green chilli, finely chopped
1 tbsp. Marination
Coriander leaves
Breadcrumbs of a slice of bread
1 tbsp. Mozzarella Cheese
Salt to taste.
Method:-
1. In a bowl mix all the marination ingredients and keep aside.
2. In a pan heat oil and saute the rest of the stuffing ingredients in it and let this mixture cool down to room temperature.
3. Once the mixture cools down, add coriander leaves, bread crumbs, mozzarella cheese, salt and mix well.
4. Coat the mushroom caps with the marination and stuff them with the mixture and fry in a pan with oil in it, placing the stuffed side down.
5. Flip over once the mushrooms turn brown in colour. Cover the pan with a lid and cook for 7 minutes. Alternatively, you can bake them in the oven at 180°C for 12-15 minutes.
