How To make Waikiki Appetizers
1 1/2 lb Bulk Pork Sausage
20 oz Pineapple Chinks In Syrup
1/2 c Packed Brown Sugar
1/4 c Lemon Juice
2 tb Cornstarch
2 tb Soy Sauce
1/2 c Chopped Green Pepper
1/2 c Drained Maraschino Cherries
Shape sausage into 1/2 to 3/4 inch balls. Place in single layer in baking pan. Bake in 400?F oven 25 minutes, or until cooked; drain on paper towels. Meanwhile, drain pineapple, reserve syrup. Add enough water to syrup to measure 1 cup; combine with brown sugar, lemon juice, cornstarch and soy sauce in large saucepan. Cook and stir until sauce boils and thickens. Fold in green pepper, cherries, pineapple chunks and drained cooked sausage. To serve, turn into chafing dish. Typed by Syd Bigger.

A yummy chicken and pineapple dish with a sweet sour sauce. I show you how to make it!
The sauce had a bit of a bite, but I REALLY liked this dish despite its name lol Everything with pineapple in it is considered Hawaiian ;)
2-3 LB. CHICKEN PIECES
1 CAN SLICED PINEAPPLE (1 LB. 4 OZ.) or approximately 2 c. fresh pineapple
1 large green pepper, cut crosswise in circles
**Sweet Sour Sauce:
1/2 c. sugar
2 Tbsp. cornstarch
3/8 c. cider vinegar
3/8 c. pineapple juice (use the fluid from the can of pineapple)
1 Tbsp. soy sauce
1/2 tsp. ginger
1 chicken bouillon cube
**This sauce is a very good standard sort of sauce that you can use for dipping chicken nuggets in.
Shake the chicken in a paper bag with flour, salt and pepper. Brown it in a skillet and then place uncovered in a glass baking dish in oven at 350 degrees. While chicken is baking, make the sauce. Combine sauce ingredients in a saucepan, cook, stirring constantly and boil 2 minutes until sauce thickens. Pour immediately over chicken. Place pineapple and green pepper over chicken during last half hour of baking time. Total baking time 1 to 1-1/4 hours.
Note: For 4-5 lbs. chicken, double the sauce. Serve with rice and a tossed salad or cooked vegetables.

Pineapple Meatballs Recipe

Meatballs:
1 pound lean ground beef
1 egg
1/3 cup breadcrumbs
1/2 tsp salt
1/4 tsp black pepper
1 tsp Worcestershire sauce
1/4 tsp garlic powder
Bake meatballs in the oven at 350 degrees for 20 -25 minutes
Sauce:
1 cup brown sugar
2 1/2 TBS cornstarch
1 1/2 cups pineapple juice (from can of pineapple chunks)
1/4 cup white vinegar
1 1/2 TBS soy sauce
1 1/2 tsp Worcestershire sauce
Heat over medium heat for 3-4 minutes until thickened
Add Pineapple chunks from a 20 oz can to the sauce when it has thickened. Then add the cooked meatballs. Place all in an oven safe dish and bake at 350 degrees for 25 minutes. Enjoy!
