4 Tbs Margerine or Butter
1 Medium Onion, diced
1 Garlic Clove, minced
3 Tbs Flour
3-1/2 Cups Milk
2 Cups Cheddar Cheese
2 Cups Ham or Turkey Ham, diced
8 Medium Potatoes
Garlic Salt to taste
Pepper to taste
Paprika sprinkled on top (optional)

4 Russet Potatoes
1 onion
3 tbs butter
3 tbs all purpose flour
2 cups milk
1 tbsp garlic
1-1/2 cups shredded cheddar cheese
1/2 cup shredded Colby jack cheese or Mozzarella
1 pinch of nutmeg
Salt, pepper, garlic to taste
dried thyme
Cajun Seasoning or All Purpose Seasoning
1 tbs butter (to grease the skillet)
Parsley
Directions:
Preheat oven to 400 degrees.
Butter your cast iron skillet or casserole dish with room temperature butter.
Using a mandolin (or slice thinly with a sharp knife) - slice your potatoes into about 1/4 inch thick slices. - Slice onions into thing rings.
In a saucepan, melt butter over medium heat. Mix in the flour and stir constantly with a whisk for one minute. Season with salt, pepper, garlic, and onion powder. (Season to taste. Make sure this cheese sauce has the flavor profile you’re looking for)
Stir in milk. Cook until mixture has thickened. Add in thyme and cheese and continue stirring until melted. (about 1 minute)
Ladle some of the cheese mixture into the skillet to coat the bottom. Next, add a layer of potatoes, followed by onions, and topped with cheese. Repeat this layering process until your skillet is mostly full. Top with a layer of cheese and bake for 1 hour or until potatoes are tender and cheese is browned. Garnish with chopped parsley.

Scalloped Potatoes

Ingredients
2 tablespoons unsalted butter, plus more for greasing
3 tablespoons all-purpose flour
1 1/2 cups whole milk
1/4 teaspoon ground nutmeg
1 teaspoon kosher salt
Freshly ground black pepper
4 ounces Gruyere, shredded
Nonstick cooking spray, for the baking dish, optional
2 pounds Yukon gold potatoes, peeled and sliced 1/8-inch thick
6 ounces thick-cut ham, diced
1/2 cup chopped fresh chives
Directions
Preheat the oven to 350 degrees F.
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Whisk in about 1/2 cup milk and cook, whisking, until thickened. Add another 1/2 cup milk and cook, whisking, until thickened, about 3 minutes. Add the remaining 1/2 cup milk and cook, whisking, until thickened, another 3 to 4 minutes. Add the nutmeg, 1/2 teaspoon salt, a few turns of black pepper, and half the cheese. Cook gently for a few minutes, making sure all the cheese is melted.
Grease or butter an 8-inch square baking dish. Arrange half of the potatoes all over the bottom. Sprinkle with 1/4 teaspoon salt. Layer in half of the cream mixture, then sprinkle on the ham and half of the chives. Arrange the other half of the potatoes on top, then sprinkle with the remaining 1/4 teaspoon salt, remaining cream, remaining shredded cheese and remaining chives. Cover and bake for 45 minutes, then uncover and bake until browned on top, an additional 20 minutes. Let cool slightly, then serve.

500 ml milk
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon oregano

Healthier Scalloped Potatoes and Ham
Prep: 10 minutes | Cook: 50 minutes | Serves: 6-8
¼ cup butter
¼ cup flour
1 teaspoon salt
1 teaspoon dried parsley
1 ¼ cup low fat milk
1 cup chicken broth
1 (1.5lb) bag Little Potatoes, thinly sliced
2 cups diced, cooked ham
1 cup shredded low fat mozzarella cheese (or cheese of choice)
METHOD
In a large saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook 1 minute.
Stir in salt and parsley.
Add milk and chicken broth and continue cooking over medium heat, whisking often, until thickened.
Preheat oven to 375 degrees F and lightly grease a 9x13” casserole dish.
Combine sliced potatoes and ham in casserole dish and cover evenly with sauce.
Sprinkle with cheese and bake for 40-45 minutes until potatoes are tender and cheese is golden brown. Let sit for 5-10 minutes before serving.
