4 Green onions, chopped -sliced (12 slices) 2 tb Butter 1 Hard boiled egg 2 tb Flour 1 Tomato (6 slices) 1/2 c Sour cream 1/2 ts Chopped parsley 3/4 c Shredded sharp cheddar 3/4 c Buttered bread crumbs -cheese Salt and pepper to taste 2 md Potatoes, cooked peeled and 1 pk Graham cracker tarts (6) Saute onions in butter. Blend in flour and cook at medium heat. Stir in sour cream, cheese, parsley, salt and pepper. Layer potato slices in tarts. Spread 1/2 the sour cream mixture over potatoes. Layer tomato slices and egg slices in crust. Layer the rest of the potatoes and sour cream mixture on top. Sprinkle with bread crumbs and bake for 40-45 minutes at 350 degrees F. This recipe is traditionally done while camping, using charcoal briquettes and a real campfire! Although it tastes better that way, doing it in the oven tastes amazing too! ---------------------------------- MOUNTAIN MAN BREAKFAST RECIPE Courtney Budzyn
*NOTE: If you have a larger Dutch oven than what is used here, you will need to use larger quantities of the ingredients in order to have even layers.
| Ingredients |
7 Slices of Bacon, Cut into Bite Sized Pieces 1 Cup Ground Breakfast Sausage 1 Large Onion Finely Diced 1 Green Pepper, Diced 1 Red Pepper, Diced 5 Potatoes, Peeled and Cubed (Enough to Cover in an even layer) 2 Tablespoons Butter 10 Eggs, Scrambled and Seasoned 1 ½ Cups Sharp Cheddar Cheese 1 Teaspoon Garlic Powder ½ Teaspoon Cayenne Pepper Salt and Pepper to Taste
| Instructions |
In a Dutch oven with high sides, over medium high heat, cook bacon and sausage together. Breaking apart the sausage with your spatula. Cook until brown in color. Drain excess fat.
Add chopped onion, cook for 1 minute. If there is a lot of fond on the bottom of the pan, add ¼ cup of cold water and scrap the bottom clean. Allow to steam for 1 minute.
Add chopped red and green pepper. Season with garlic powder, cayenne, salt and pepper. Cook for 2 minutes.
Top with cubed potatoes in an even layer. Pressing them into the mix firmly. Season with salt and pepper. Top with small chunks of butter.
Cover and cook in a 425°F oven until the potatoes are ALMOST fork tender. About 20 minutes.
Remove from oven, top potato layer with cheese.
In a separate bowl, beat eggs with a splash of milk and any seasonings you would like to add.
Pour eggs over potatoes, gently shake the pan to even the egg layer.
Place back into at 375°F oven for about 20 minutes or until eggs are set.
Serve with sour cream.

✅Ingredients
• 20 ounce package frozen diced or shredded hash browns • 1 white or yellow onion, diced • 1 red bell pepper, diced • 8 ounces diced ham, or 1 pound cooked ground sausage • 4 ounces diced green chiles, drained (optional) • 10 large eggs • 2 cups half and half • ½ teaspoon salt • ½ teaspoon black pepper • 2 cups shredded cheddar cheese
✅Instructions
1️⃣ Preheat oven to 350 degrees F and lightly grease a 9x13 pan.
2️⃣ Add frozen hash browns, onion, bell pepper, ham (or cooked sausage), and green chiles directly in the 9x13 pan and toss together.
3️⃣ In a large mixing bowl, whisk eggs. Pour in half and half and season with salt and pepper and whisk to combine. Stir in shredded cheese.
4️⃣ Pour egg mixture on top of hash brown mixture in the prepared pan.
5️⃣ Cover the pan with aluminum foil and bake in the preheated oven for 45-60 minutes until eggs are set. ????????????????????????????????????

1 lb bulk sage pork sausage 1 cup green bell pepper, chopped 1 cup red bell pepper, chopped 10 eggs 2 cups whole milk ¼ tsp ground black pepper ½ tsp garlic powder ½ tsp salt 3 cups frozen country style hash browns 1 cup French’s crispy fried onions 8 oz cheddar cheese hot sauce, optional
Bake at 350 F or 177 C uncovered for 40 minutes. Then cover with foil and bake 10 more minutes.
*Be sure to let the casserole sit out at least 20-30 minutes before baking because the sudden changes in temperature may cause the dish to shatter or break.

Breakfast Casserole, quick, easy, and delicious
Breakfast or dinner, which do you prefer? I love breakfast for dinner. This casserole doesn't disappoint. Serve with a side salad, grilled asparagus, or your favorite side and you have a delicious dinner. Don't forget the salsa! Or, serve with your favorite morning fruit and you have a delicious, hearty breakfast. Whichever you choose to make it for, I just hope you will make it. Let me know if you do. Recipe below.

Ingredients: 2 cups hash brown potatoes O'Brien (if you can't find these potatoes, add a few diced onions and red or green bell peppers) 6 x-large eggs 1 1/4 cups milk, I used half evaporated and half heavy cream 1/2 lb breakfast sausage 2 cups cheese, shredded sharp and/or mild 2 Tbsp mascarpone cheese, can substitute cream cheese 1/2 tsp paprika 1/-1/4 tsp ground red pepper salt & pepper to taste
Directions: Preheat oven to 350 degrees. Spray 8X8 baking dish with non-stick spray. Add sausage to a skillet, breaking up and cooking until done or almost done. Remember, it will continue cooking in the oven. Meanwhile, in a separate bowl, beat eggs with milk. I used a combination of evaporated milk and heavy whipping cream. You can use whole milk or half & half. Your choice. Whip in the mascarpone cheese. Stir in cheeses, and seasonings. When sausage is cooked, add to egg mixture, stirring to combine. Add potatoes to bottom of the baking dish, spreading out evenly. Pour mixture into the sprayed baking dish over the potatoes. Bake 45-55 minutes or until a toothpick inserted in the middle comes out clean. If top of casserole starts getting too brown, cover with aluminum foil and continue to bake.
