This simple, comforting potato casserole was one of my favorite foods growing up, and it would have been a favorite of mine as an adult, if I hadn’t gone to culinary school. Happily, I’ve rediscovered how great this significantly less rich milk-based version is, and I’m very excited to be sharing it with you. Enjoy!

CREAMY SCALLOPED POTATOES - How to make SCALLOPED or AU GRATIN POTATOES Recipe
An American favorite dish...SCALLOPED POTATOES, also know as AU GRATIN POTATOES. This popular (bake in the oven) creamy cheesy dish made with thinly sliced potatoes, grated cheese, milk, onions (optional), butter, salt & pepper is the BEST. CREAMY SCALLOPED POTATOES
Preheat oven to 350 degrees F.
Grease 1 quart baking dish, set aside
4 cups potatoes, clean under cool running water, peel, slice thinly & covered with fresh cool water
8 ounces Colby & Montaray Jack cheese, grated (set aside 1/2 cup for topping)
1 1/2 cups milk
2 Tablespoon onion, minced
3 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1. In a medium skillet or sauce pan, over medium-high heat, melt butter. Whisk in flour & onions, cook 1 minute.
2 Slowly whisk in milk, continue to stir until mixture is bubbly. Remove from heat.
3. Add salt, pepper and grated cheese. Whisk until blended.
4. In prepare baking dish, arrange half the drained potato slices in the bottom. Cover potatoes with half the cheese sauce. Add another layer of the remaining drained potato slices and cover in remaining cheese sauce.
5. Top with reserved 1/2 cup of grated cheese.
6. Bake uncovered for 1 hour.
7. Cool 30-40 minutes before serving.

4 Russet Potatoes
1 onion
3 tbs butter
3 tbs all purpose flour
2 cups milk
1 tbsp garlic
1-1/2 cups shredded cheddar cheese
1/2 cup shredded Colby jack cheese or Mozzarella
1 pinch of nutmeg
Salt, pepper, garlic to taste
dried thyme
Cajun Seasoning or All Purpose Seasoning
1 tbs butter (to grease the skillet)
Parsley
Directions:
Preheat oven to 400 degrees.
Butter your cast iron skillet or casserole dish with room temperature butter.
Using a mandolin (or slice thinly with a sharp knife) - slice your potatoes into about 1/4 inch thick slices. - Slice onions into thing rings.
In a saucepan, melt butter over medium heat. Mix in the flour and stir constantly with a whisk for one minute. Season with salt, pepper, garlic, and onion powder. (Season to taste. Make sure this cheese sauce has the flavor profile you’re looking for)
Stir in milk. Cook until mixture has thickened. Add in thyme and cheese and continue stirring until melted. (about 1 minute)
Ladle some of the cheese mixture into the skillet to coat the bottom. Next, add a layer of potatoes, followed by onions, and topped with cheese. Repeat this layering process until your skillet is mostly full. Top with a layer of cheese and bake for 1 hour or until potatoes are tender and cheese is browned. Garnish with chopped parsley.

Here is my Cheesy Scalloped Potatoes Recipe that is a great accompaniment to a Brown Sugar Mustard Glazed Ham. Depending on where you live, Scalloped Potatoes are also sometime referred to as Potatoes Au Gratin. I hope you all enjoy the recipe. This is one of my go-to Newfoundland recipes. Ham and Scalloped Potatoes
Cut up ham, diced onions, sliced potatoes, ....layer in baking dish....sliced potatoes, ham, onions, flour, salt pepper , butter.....make another layer....and another....add half and half to almost half way up inside of baking dish...bake at 375 for one hour
