How To make Potato and Bologna Scallop
3 cups bologna
cubed
4 medium potatoes :
sliced
10 ounces frozen peas
1 can cheddar cheese soup or cream of
mushroom or celery 3/4 cup milk
1 tablespoon onion grated
1/2 teaspoon dried sage
1 cup cheddar cheese :
grated
Combine bologna and potato in shallow 6 cup casserole. Cook frozen peas, add soup, milk, onion and sage. Bring to boiling, stir in cheese. Pour over bologona and potatoes. Bake at 375 F for 30 minutes or until bubbly hot. 4 servings.

Pan toasted potato sandwich: An easy and fun dinner idea that is ready in no time!
These pan toasted potato sandwiches are a great idea for a nutritious and tasty meal. The dough for the ‘bread slices’ is light and tasty, and the cheese filling is irresistible.
INGREDIENTS FOR 2 SERVINGS
400g potatoes
200g flour
50g Parmesan cheese
1 packet of baking powder
salt
pepper
parsley
1 egg
100g bologna
6 slices of cheese
METHOD
Boil and mash the potatoes and add salt, pepper, and parsley to them. Once they have cooled, add the egg, flour and baking soda. Spread out the mixture and cut out four squares, these will be used as the slices of bread for your sandwiches. On two of these squares place the bologna and the cheese slices (you can fill them with anything you like), top with the other slice and carefully seal all four sides. Cook them in a pan on low heat for about 8 minutes per side. Serve hot!

INGREDIENTS 600g potatoes 80g parmesan cheese salt pepper 1 tbsp olive oil 190g flour ham cheese METHOD 1. Boil the potatoes or cook them in the microwave for about 10 minutes. Mash the potatoes and add the flour, and the Parmesan cheese, salt and pepper. 2. Spread out the mixture on a sheet of parchment paper and cut out some circles. P 3. Place cheese and ham on one circle and then cover it with another circle. 4. Pour some olive oil in a pan and cook each pancake for 5 minutes on each side. 5. Your potato pancakes are ready to serve!

3) Easy potato balls
INGREDIENTS 170g potato flakes 120 cornstarch 40g parmesan 7g salt 550ml water METHOD 1. Mix potato flakes with cornstarch, parmesan and salt. 2. Add the water and make some balls. 3. Fry them in hot oil for 5 minutes. 4. Serve hot.

1 onion, diced
12 ounces smoked sausage, cut into 1/4 inch rounds

pepper
garlic powder
Place potatoes on bottom of slow cooker. Add onion & sausage. Add salt, pepper & garlic powder to taste. Add water to cover bottom of slow cooker, approximately 2 cups. Cook on low 6 hours.
