How To make Pork Satay
1/2 lb Boneless Pork; Lean
2 T Soy Sauce
2 T Steak Sauce; Thick
10 ea Apricots; Dried
1/4 c Peanut Butter; Chunky/Smooth
1/2 t Salt
5 ea Hot Pepper Sauce; drops
Cut the pork into 3/4-inch cubes and combine with the soy sauce and steak sauce. Cover and refrigerate for several hour, stirring occasionally. Meanwhile, simmer the apricots in 3/4 c water for 5 minutes. Place the apricots and their cooking liquid in a blender container or food processor. Add peanut butter, salt, and hot pepper sauce. Cover and process until smooth. Reheat when ready to serve. Thread the marinated pork cubes on skewers. (If you use wooden skewers, soak them in water 2 hours before using.) Brush with remaining soy sauce mixture. Cook over hot coals or under broiler for 6 to 8 minutes, turning often. Serve with the warm apricot-peanut butter sauce for dipping. NOTE: Satay serves 2 when served as a main course. Double the meat portion of the recipe for 4 people. If you like, serve kabobs of mushrooms along with the pork. Thread small fres mushrooms on separate skewers, brush with melted butter and grill or broil along with the pork.

Thai pork satay and satay sauce recipe that I made in this video, uses peanut butter instead of crushed peanut and the result is amazing.
Ingredients for making Thai pork satay and satay sauce recipe
For marinade the pork :
500 g pork
1 tbsp galangal
1 tbsp lemongrass
1 tsp coriander seeds
3 cloves of garlic
1 tsp curry powder
1 tsp caraway powder
2 tsp salt
1 tsp pepper
1 tsp turmeric powder
** Bring everything above to pound**
2 tbsp palm sugar
20 g butter
150 ml coconut milk

Satay Sauce :
2 tbsp peanut butter
250 ml coconut milk
1 tbsp massaman curry paste
1+1/2 tbsp red curry paste
2 tbsp palm sugar
1/4 tsp salt
3 tbsp tamarind juice
150 ml water
2 tbsp coconut milk
-----------------------------
Cucumbers Salad :
5 tbsp water
4 tbsp sugar
3 tbsp vinegar
1/4 tsp salt
cucumbers
purple onion
chili

Quick and Simple Peanut Satay Sauce

There are many variations of peanut or Satay sauce, some can be quite complex if made from scratch. But with a few short cuts it's surprisingly simple to make. This recipe is super simple and the results are outstanding. You could use fresh peanuts if you have the time, otherwise a good quality crunchy peanut butter does an excellent job. This sauce also goes well with any grilled skewered meats, over vegetables or as a dipping sauce. Also see my chicken Satay recipe.

SPICY Peanut Butter Satay ????
A rich and creamy satay that relies on one of my favourite pantry ingredients, peanut butter! This also works incredibly well with chicken thigh meat. If you can't find kecap manis, replace with I tbsp dark soy sauce and a little brown sugar to taste.
Serves: 4
Ingredients (US & METRIC):
2 tbsp groundnut (peanut) or vegetable oil
1 onion, thinly sliced
3 garlic cloves, thinly sliced
3cm (1in) piece of fresh ginger, peeled and grated
1 red chilli, deseeded and thinly sliced
500g (1Ib 2oz) pork loin fillet, diced
4 tbsp crunchy peanut butter
1 tbsp kecap manis
2 tbsp soy sauce
2 tsp fish sauce
400ml (1¾ cups) tin coconut milk
200g (7oz) baby spinach
To serve:
Rice noodles
Juice of 1 lime
Handful of peanuts, chopped
Small handful of coriander (cilantro) leaves
1. Heat the oil in a pan over a high heat and fry the onion for 6 minutes until it begins to soften and colour. Add the garlic, ginger and chilli and fry for a couple more minutes until aromatic.
2. Add the diced pork and increase the heat to brown all over, then add the peanut butter, kecap manis, soy sauce, fish sauce and coconut milk.
3. Bring to the boil then reduce the heat and simmer gently for 20 minutes until the pork is tender and the sauce a little reduced and thickened. Add the spinach, remove from the heat and stir until the spinach has wilted.
4. Serve with noodles, squeeze lime juice over the top and sprinkle with peanuts and coriander leaves.

1/2 kilo chicken thigh fillet, cut into 1-inch cubes
2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons sriracha (optional)
1 tablespoon curry powder (**NOTE: REMOVE SA VO NA 2 TBSPS)
4 tablespoons brown sugar
2 tablespoons peanut butter
3 cloves garlic, minced
4 tablespoons pineapple juice
1 teaspoon grated ginger
Sesame oil
Set B:
1 1/2 cups milk (evaporated /fresh/coconut)
1/4 cup brown sugar
1 tablespoon curry powder
1 teaspoon soy sauce
1 teaspoon sriracha
4 tablespoons peanut butter
1 tbsp. vinegar (optional)
Set C:
Crushed peanuts
Sliced onions
Sliced cucumbers
Sliced tomatoes
Salt & pepper, to taste
