Malaysian Chicken Satay with Peanut Sauce
There are hundreds of variations on satay across Southeast Asian. Lemongrass, palm sugar and a range of spices from the backbone of the satay marinade and dry roasted peanuts provide deep, earthy flavour for peanut sauce. A ripping hot grill - preferably a barbecue - to get that flavourful charring on the chicken.
The satay recipe makes plenty of sauce - anything leftover will stay in the fridge for a couple of weeks, or you can freeze it.

Home cooking has traditionally been a process carried out informally in a home and can be enjoyed by all members of the family, although in many cultures women bear primary responsibility.

Beef Satay with Ginger Garlic Hoisin Marinade

Ingredients:
1 pounds flank steak
1/2 heaping teaspoon cornstarch
1/4 cup cold water
Marinade Ingredients:
1 pounds flank steak
2 tablespoons light soy sauce
2 tablespoons dark soy sauce
1 tablespoons sugar
1 tablespoons hoisin sauce
2 teaspoons minced fresh ginger
2 teaspoons chopped fresh garlic
Directions:
Marinade - Bring soy sauce and sugar to boil in a small pot or skillet, stir to help sugar dissolves. Add the rest of the marinade ingredients and stir to combine. Remove from heat and let cool to room temperature.
In a bowl add the marinade and sliced flank steak. Coat the steak in the marinade and refrigerate overnight.
Remove meat from marinade and thread the meat on skewers, weaving the meat in and out.
Save the left over marinade and pour into a small pot, bring the leftover marinade to a boil. Mix the cornstarch and water to make slurry. Add to the boiling marinade. Stir until marinade slightly thickens. Set aside for basting sauce.
Prepare the grill for medium high heat.
Place meat skewers on the hot grates and grill each side for 2-3 minutes.
Grill for another 1-2 minutes over medium heat until done.
Baste meat with the basting sauce a few times until the meat on the skewers are well covered with sauce
Serve hot. Great with sliced raw sweet onions.

Satay and peanut sauce is a classic Thai street food that's usually made from pork, but the satay that was first introduced to Thailand via Indonesia was made from beef and lamb. This is an ode to the original satay, complete with an authentic recipe for Thai peanut sauce, of course (no peanut butter!). It's a recipe perfect for summer grilling and for a crowd, it's also gluten free!

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin's Kitchen.
