How To make Thai Pork Satay
1 tb Curry powder
1 ts Turmeric
1 tb Palm sugar or brown sugar
2 tb Fish sauce (nam pla)
2 tb Lime juice
1 tb Vegetable oil
1 lb Boneless pork loin
- cut into 3" long x 1" wide - 1/4-inch-thick strips 24 8-in bamboo skewers
- soaked in water for 1 hour 1/2 c Thick coconut cream
-(RECIPE Follows)
COCONUT MILK AND CREAM:
1 cn Unsweetened coconut milk
COMBINE CURRY POWDER, turmeric, palm sugar, fish sauce, lime juice and oil. Toss pork strips with marinade. Thread 3 or 4 pork strips onto the skewers, weaving in-and-out, sideways, in a ribbon fashion. Marinate for 30 minutes or longer. Preheat grill. Brush strips with thick coconut cream. Place (brushed side down) over hot coals for 1 to 2 minutes or until charred and cooked. Turn over, brush with coconut cream and grill until cooked. Serve with Spicy Peanut Sauce (See RECIPE). TO PREPARE COCONUT MILK AND CREAM: Pour 1 can unsweetened coconut milk into a tall glass. Allow to sit for at least 1 hour so the thick cream rises to the top. Skim off top (cream) and set aside. The rest is thin coconut milk.

2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons sriracha (optional)
1 tablespoon curry powder (**NOTE: REMOVE SA VO NA 2 TBSPS)
4 tablespoons brown sugar
2 tablespoons peanut butter
3 cloves garlic, minced
4 tablespoons pineapple juice
1 teaspoon grated ginger
Sesame oil
Set B:
1 1/2 cups milk (evaporated /fresh/coconut)
1/4 cup brown sugar
1 tablespoon curry powder
1 teaspoon soy sauce
1 teaspoon sriracha
4 tablespoons peanut butter
1 tbsp. vinegar (optional)
Set C:
Crushed peanuts
Sliced onions
Sliced cucumbers
Sliced tomatoes
Salt & pepper, to taste

This is a Thai-style Chicken Satay complete with an Indonesian peanut sauce to finish it off. The perfect summer recipe for the grill if you ask me.

Chicken Marinade: 1 1/2 lbs of boneless chicken thighs makes 12 skewers
1/2 cup avocado oil (any other neutral oil is fine)
1 oz fresh lemon grass (1 large stick of lemongrass)
8 cloves of fresh garlic
1/2 cup fish sauce
1 1/2 tbsp curry powder
4 kefir lime leaves (sub with the zest of 1 lime)
1/4 cup lime juice
Indonesian style peanut sauce:
2 tbsp avocado oil
1 large or 2 medium shallots small dice
5 garlic cloves small dice
1 1/2 Fresno chilis small diced
1 1/2 cups coconut milk
3/4 cups peanut butter (crunchy)
2 tbsp dark soy sauce
2 tbsp sweet soy sauce or kecap manis (sub with regular soy sauce)
2 tbsp lime juice

Thai pork satay and satay sauce recipe that I made in this video, uses peanut butter instead of crushed peanut and the result is amazing.
Ingredients for making Thai pork satay and satay sauce recipe
For marinade the pork :
500 g pork
1 tbsp galangal
1 tbsp lemongrass
1 tsp coriander seeds
3 cloves of garlic
1 tsp curry powder
1 tsp caraway powder
2 tsp salt
1 tsp pepper
1 tsp turmeric powder
** Bring everything above to pound**
2 tbsp palm sugar
20 g butter
150 ml coconut milk
---------------------------
Satay Sauce :
2 tbsp peanut butter
250 ml coconut milk
1 tbsp massaman curry paste
1+1/2 tbsp red curry paste
2 tbsp palm sugar
1/4 tsp salt
3 tbsp tamarind juice
150 ml water
2 tbsp coconut milk
-----------------------------
Cucumbers Salad :
5 tbsp water
4 tbsp sugar
3 tbsp vinegar
1/4 tsp salt
cucumbers
purple onion
chili
