Sunny's Easy 4-Ingredient Pulled Pork

Ingredients
One 4- to 5-pound boneless pork shoulder (Boston butt), fat cap removed
Kosher salt and freshly ground black pepper
2 tablespoons ground cumin
Two 15.5-ounce jars salsa (mild, medium, or hot, however you like it)
1/2 cup peanut butter
Garlic Mashed Potatoes, for serving, recipe follows
Garlic Mashed Potatoes :
1/2 stick (4 tablespoons) unsalted butter
2 cloves garlic, minced
One 24-ounce package prepared Yukon gold garlic mashed potatoes, preferably Good & Gather
2 scallions, thinly sliced
Directions
Sprinkle the pork butt generously with salt, black pepper and about a tablespoon ground cumin. Place in a slow cooker.
In a medium bowl, whisk together the salsa, peanut butter and remaining tablespoon cumin. Pour into the slow cooker over the pork butt. Cook on low for 8 hours, or until fork tender.
Remove the pork butt from the slow cooker and shred with 2 forks. Serve in bowls over the Mashed Potatoes, topped with a ladle of the cooking liquid from the slow cooker.
Garlic Mashed Potatoes:
Yield: 4 servings
Add the butter to a medium pot and place over medium-low heat. Once melted, add the garlic and cook until the garlic flavor is infused into the butter, 2 to 3 minutes. Add the mashed potatoes and mix to combine. Cook until the mashed potatoes are heated through, about 5 minutes. Top with the scallions and serve.

2 tbsp sweet & smoky seasoning rub
1 tbsp black pepper
2 tbsp seasoned salt
2 tbsp garlic powder
2 tbsp onion powder
2 tbsp complete seasoning
sauce
1 1/2 cups apple cider vinegar
2 tbsp ketchup
2 tbsp brown sugar
1 tsp red pepper flakes
1 tsp black pepper
1 tsp salt
bbq sauce of your choice

North Carolina Pulled Pork + Homemade Sweet Coleslaw
Years ago a buddy from North Carolina introduced me to a pulled pork sandwich topped with coleslaw. I didn't think I would like it, but the sweetness and moisture from the slaw on top of sweet pulled pork was an instant favorite.
In this recipe and video we add another North Carolina staple, Cheerwine, to make a delicious BBQ sauce. This classic southern, cherry soda is truly the cherry on top of this sandwich!

Ingredients you'll need:
4 pounds boneless pork boston butt, cut into 2 inch chunks
4 cloves garlic, sliced
3 bay leaves
2 cinnamon sticks
juice of 2-3 limes
water to cover pork (1.5-2 cups)
Spice mix -
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika or smoked paprika
1 tablespoon kosher salt
