CGVH43B BETTE LELAND:
DOUGH:
3 c Flour (to 4 c)
2 tb Sugar
1 pk Rapid- rise yeast
1 Egg
1 c Milk
1/2 c Softened butter
1 ts Salt
FILLING:
1 c Golden Delicious apple,
- pared, cored and chopped 1/2 c Nuts, finely chopped
- (I use pecans) 1/3 c Sugar
1/3 c Brown sugar
1/4 ts Cinnamon
Combine 1 c. flour, sugar, yeast and salt. Heat milk and 2 tbl. butter to 120 degrees; add egg and blend. Add milk mixture to flour mixture and beat
until smooth. Add only enough remaining flour t make a soft dough; knead until satiny. Cover, let rest 20 min. Divide dough into 32 parts; flatten each piece in palm and fill with 1/2 ts filling. Pinch edges together; roll to form a ball. Melt remaining butter; dip balls in butter. Arrange 16 filled balls in a well-greased tube pan so they just touch in a single layer. Sprinkle with half of the remaining apple filling. Add remaining balls; sprinkle with remaining filling on top. Pour any remaining butter over top. Cover; let rise for 20-30 min. Bake 375 for 35-40 min. Cool 10 min. Invert onto serving plate. Makes 10 servings Filling: Mix all ingredients together. Bette...NM 10/93 -----

Garam Masala Sticky Bun Monkey Bread:
Dough (MAKE TWO SEPARATE BATCHES!!!!!)-
- 1.5 cups (375g) whole milk
- 2.25 teaspoons instant yeast
- 1/4 cup (52g) granulated sugar
- 4.25 cups (640g) all-purpose flour
- 1.25 teaspoon fine sea salt
- 2 large eggs
- 6 tablespoons (82g) unsalted butter, melted and slightly cooled
Glaze-
- 1/2 cup unsalted butter
- 1 cup packed light brown sugar
Spiced Sugar-
- 1/4 cup melted unsalted butter
- 1 cup sugar
- 1 tablespoon garam masala
- 1/4 teaspoon fresh ground nutmeg
Rum Caramel-
- 1 cup sugar
- 1/4 cup water
- 1/3 cup cold butter, cubed
- 5.5 tablespoons dark rum
- 1/2 cup heavy whipping cream
- 1 cinnamon stick charred
Sesame Parmigiano Garlic Monkey bread:
Same Dough as Above
Dip:
- 1/2 cup melted SALTED butter
- 1/2 cup sesame seeds
- 1/4 cup finely chopped garlic
- 2 cup parmigiano reggiano, finely grated
- 1/2 cup fresh parsley, finely chopped
- 1 teaspoon fresh thyme, finely chopped
- butter for brushing

4 Tips for making the perfect Fruit Galette Pie Crust
For making a wonderful galette ,we need to make an excellent crust pastry dough for the base.
Here are some tips for creating the perfect crust:
1.Use minimum water as possible while preparing the pie dough :
Water and any other liquids will increase gluten development and make your crust less tender.So to make flaky galette crust ,use water sparingly as possible.
2.Always try to keep the butter cold and pliable
Keep the butter cold and pliable ,so that we can make flaky pie crust.This will also prevent over working the dough and thus a tough crust.
It is important to keep the butter cold especially just when we place it into the oven for baking.At this point, if the butter is soft it will melt fast and we will end up with a pool of melted butter.
3.Baking Temperature and Duration for making Apple cinnamon galette
To make the best fruit galette, baking temperature and duration is also very important.
The initial high temperature will help to cook the crust and later the filling.
The final 18-20 minutes of baking at lower temperature will help to make the crust crispy.The lower temperature will prevent any chance of over browning on top.
4.To prevent Soggy Bottom
Take care to pour the liquid only just before taking the pastry into the oven for baking.
Add enough corn flour to the fruit mix so that the filling will remain thick and gooey.1-2 tablespoons of corn flour can be used in this cinnamon apple galette recipe.
