minced 2 TB black pepper 2 TB salt For marinade: Mix all together and let stand overnight. For pork pull: Season with salt and pepper. Smoke over hickory at 225-250 degrees for 8 to 10 hours. Let pork cool slightly. Pull the meat apart with a fork. Chop it up slightly and pour marinade over it. Allow it to rest for 1 hour. Mix the meat up thoroughly. Spice Rub: 1/2 cup brown sugar 1/2 cup white sugar 6 tbsp paprika 2 tsp ground ginger 2 tbsp onion powder 1 tbsp garlic powder 1 1/2 tbsp kosher salt (I used rosemary salt) 1 tbsp chipotle powder 1 tbsp ground mustard 1 tbsp pepper

My best pulled pork
This takes 36 hours to make - and it's worth it. A 24 hour dry brine seasons the pork all the way through, followed by slow roasting for 12 hours at a really low temperature.
I would not tell you to roast a pork for 12 whole hours if I was not 100% sure that this produces the best results! It really does, and the reason is simple: lower heat means less moisture loss which means more succulent meat. Plus, a great bark on the surface that everybody loves about traditional BBQ food. It’s my favourite part!

1.5kg Skinless Pork Shoulder
Dry Rub -
LIQUID SMOKE ( check internet ) 4 tsp of SMOKED Paprika 1 tsp Mustard Powder 1 tsp Chilli Powder 1 tsp Ground Cumin 2 tsp Garlic Powder 1 tsp Black Pepper 1 tsp Salt 2 tbls Brown Sugar
For the BBQ Sauce -
1 tbls Dark Treacle 1 Bottle of good quality Tomato Ketchup 4 tbls Worcestershire Sauce Chipotle Tabasco Sauce 2 tsp English Mustard 2 Oranges 4 tbls Apple Juice 4 tbls Apple Cider Vinegar Bourbon ( Jack Daniels )

I made Oven-Roasted Pork Shoulder
10.26 lb. pork shoulder/butt Trimmed fat Seasoned with: 1 T salt 1/2 T black pepper 1 T garlic powder 1 T cayenne pepper 1 T chili powder 1 T onion powder wrap with foil place into 300 Fahrenheit degree oven for 4 hours remove foil and cook until internal temp reaches 200 degrees Fahrenheit
