Pork with Rhubarb Recipe - GardenFork
A rhubarb recipe that isn't a dessert! Pork with Rhubarb pairs two ingredients most don't think to cook together. Take pork cutlets, marinate them, wrap in prosciutto and bake on top of rhubarb. A big thanks to Jamie Oliver, who came up with this pork recipe.

Rhubarb pork chops
A tasty twist on the traditional pairing of pork and apple, try our delicious recipe for pork chops with rhubarb!
Thick cut pork chops with the rind scored and salted to create the perfect crackling. Cooked on the barbecue with fresh rhubarb on top and underneath the meat, as well as rhubarb cider to keep the chops moist during cooking and create the perfect sauce to finish the dish.

Dijon Rubbed Pork with Rhubarb Sauce Recipe
Serves 12 servings (1½ cups sauce)
Ingredients:
1 boneless pork loin roast (3 lbs.)
¼ cup Dijon mustard
6 garlic cloves, minced
1 Tbsp. minced fresh rosemary or
1 tsp. dried rosemary, crushed
¾ tsp. salt
½ tsp. pepper
SAUCE
3 cups sliced fresh or frozen rhubarb
⅓ cup orange juice
⅓ cup sugar
1 Tbsp. cider vinegar
Directions:
Score the surface of the pork, making diamond shapes
¼ inch deep. In a small bowl, combine the mustard,
garlic, rosemary, salt, and pepper; rub over pork.
Turn dial to Roast and adjust Temperature to 325°F.
Press Timer and adjust to 59 minutes. Close the Air
Frying Lid and press Start to preheat. When ready,
place roast in the Inner Pot. Roast until a thermometer
reads 145°F. Let stand for 10 minutes before slicing.
Meanwhile, in a small saucepan, bring the sauce
ingredients to a boil. Reduce heat; cover and simmer
for 8 to 12 minutes or until rhubarb is tender. Serve
warm with pork.
How to Make Breaded Pork Chops
Kick your pork chop game up a notch tonight and bread them! Buy thinner chops or medallions. Dredge in flour, dip in egg wash, coat in crumbs, repeat. Be as simple or adventurous with your crumb coating as you'd like. Saute for 2-3 minutes per side in a skillet until golden brown. Rest 3 minutes, garnish and savor!

2 cups roughly chopped rhubarb
1/3 cup plus 2 tablespoons sugar
1/2 stick cinnamon
4 tablespoons butter, softened
2 tablespoons honey
4 (6 to 8–ounce) bone-in pork chops
Salt and pepper
1 tablespoon canola oil
1 (16-ounce bag) frozen peas
1/4 cup chopped herbs (I like a mix of dill, mint, and chives)
Flaky sea salt, for topping
