How To make Pookie's Liver and Onions
1/2 lb Beef liver, in one thin cut
Salt Pepper Flour for dredging 2 tb Cooking oil (preferably
-peanut, corn, or sunflower) 2 tb Butter
2 Green onions', minced
1 Clove garlic, minced
1 1/2 md Onions, sliced
1 1/2 ts Flour
1 1/2 c Beef broth
3/4 ts Kitchen Bouquet (seasoning
-sauce) Even if you hate liver and onions, you'll find this tender, soulful version a revelation. If you like liver and onions, you're about to see star bursts. This recipe is based on a dish by brilliant chef Pookie Turner. 1. Season liver with salt and pepper, to taste. Dredge lightly in
flour. 2. Heat lightly oiled heavy skillet over high heat until fragrant,
about 1 minute. Add liver and fry until lightly browned, about 1 minute per side. Remove liver and reserve. 3. Clean skillet and return it to stove over medium heat until dry.
Add butter, and heat until it is melted. Add green onions, garlic, and onions; fry, stirring, until onion is translucent (about 6 minutes). 4. Sprinkle the 1 1/2 teaspoons flour over mixture and cook briefly,
until the flour turns golden and loses its raw aroma (about 1 minute); do not let flour brown. Stir in broth, Kitchen Bouquet, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Turn heat to medium-high and bring to a boil. Cook, stirring, until liquid thickens slightly, about 6 minutes. Adjust seasoning, if necessary. 5. Return liver to pan and cook on both sides for 30 seconds each (if

Prawn biryani Muslim style or Prawn dum biryani in tamil or Prawn Biryani Seivathu eppadi is yet another recipe prepared by Mr.Basha.Prawn dum Biryani is easy to make if you follow the step by step procedure mentioned in the video.

Before start Preparing this Prawn dum Biryani follow these steps:
1.Marinate the prawns using all masalas mentioned.
2.Get ready with ginger garlic paste
3.Slice the required Onions,Tomatoes,Green Chillies,Coriander leaves and mint leaves.
4.Soak basmati rice for atleast 20 mins
Step by step procedure to prepare Prawn dum biryani Muslim style:
1.Marinate prawns for atleast half an hour by adding turmeric powder,Salt,Chilli powder and with some curd.
2.Soak Basmati rice in water.
3.Take a pressure cooker and add Oil -8 tbsp
4.Add cloves-6,Cinamon-1,Cardamom-1
5.Add Sliced onion and suate this for 5 mins.
6.Then add tomotoes and green chillies and let them saute for another 5 mins
7.Add required oil if you feel that oil has not covered the onions.
8.Then add ginger garlic paste -3 tbsp saute it for 4 mins
9.Then add marinated prawns and let it cook for 5 mins.
10.Cook this in low flame,you will notice water coming out og it.
11.Add Coriander and min leav es,Salt as per taste and some chilli powder as per your spice requirement.
12.Then mix it all togther and add water.
Water ratio for basmati rice
1:2
13.Le th water come to boiling stage then add basmati rice without water.
14.Let it cook for 5 mins in high flame
15.Open the lid and mix all gently and cook for another 5 mins
16.Now check weather water has drained out...then put the biryani for dum
17.Take a tawa and place your cooker above that,let the tawa get its heat.this will take another 8 to 10 mins.
18.Once the tawa get its heat,off the flame and rest the biryani for half an hour.
19.Open the lid after half an hour.Now prawn dum biryani is ready to serve with raita or Chicken curry.

INGREDIENTS FOR MUTTON JAHANGIRI (MUGULAI RECIPE)
1. Mutton – ½ kg (with bone)
For mutton boiling:
2. Coriander seeds – ½ tbsp.
3. Fennel seeds – 1 tsp
4. Black pepper cone – ¼ tsp
5. Cardamom -2 nos
6. Cloves – 2 nos
7. Bay leaf – 3 nos
8. Garlic – 5 nos (with skin)
9. Onion – 1 medium
10. Water – 1 cup
11. salt
For Gravy :
1. Ghee/sunflower oil – 3 tbsp
2. Onion – 2 nos (Big – Finely Chopped)
3. Tomato – 2 nos (paste)
4. Ginger garlic paste – 2 tbsp
5. Cumin powder – ½ tsp
6. Chilli powder – 1 tbsp
7. Coriander powder – 1 tbsp
8. Cumin seeds – ¼ tsp
9. Cloves – 4 nos
10. Cardamom – 4 nos
11. Black cardamom – 1 no
12. Bay leaf
13. Coriander leaf
14. Salt
