How To make Polish Noodle Casserole
1/2 lb Cooked and drained noodles,
2/3 c Sour cream,
2/3 c Cottage cheese,
2 tb Minced onion,
2 tb Salt,
1/2 ts Powdered mustard, and
1/4 ts White ground pepper.
INStrUCTIONS Place: Cooked and drained noodles in a buttered 1 quart casserole dish. Mix: Sour cream, cottage cheese, minced onion, salt, powdered mustard, and white ground pepper. Mix the above with the noodles in the casserole dish. Bake in a preheated 350 F. oven for 25 minutes. (The noodles on top should begin to brown.)
To be a bit more fancy, when the 25 minutes is over, pull the casserole out of the oven, smear it with a bit of butter, and allow it to cook another 5 to 10 minutes. To be even more fancy, sprinkle some parmesan cheese on top of the butter before putting the casserole back into the oven.

How to make Haluski | Polish Comfort Food
In today's video, I'm cooking up Haluski, a comfort food from my Polish side of the family.
Haluski originated in Central and Eastern European countries and there are plenty of variations on how its made, but in general, it consists of these three components:
1. Caramelized onions & cabbage
2. Some type of noodle
3. Lots of butter!

~ Recipe ~
█ Haluski █
• 4 TBSP Butter
• ½ head of Cabbage, thinly sliced, massaged with salt
• 1 Onion, thinly sliced
• Salt & Pepper to taste
• Drop noodles (recipe below)
Melt 3 TBSP of butter in a pan over medium heat. Add the onions, salt (around 1 tsp), and pepper (around 1 tsp) and caramelize – around 10 minutes.
Add in the cabbage and remaining butter and saute for another 10 – 15 minutes until cabbage is cooked down and browned.
Add in drop noodles and saute for another 5 minutes, adjust salt & pepper to taste.
Top with parsley (optional).

█ Drop Noodles █
• 2 cups Flour
• 1 Egg
• 1 TSP Salt
• 1 cup Water
Sift flour for any lumps. Crack egg and whisk. Add salt and half of the water. Work the water into flour and then add remaining until a consistency between a pancake batter and a wet dough forms.
Bring a pot of water to boiling and add salt. Drop the noodles from the fork. Once the noodles have floated to the top, cook for a remaining 1 – 2 minutes.
Strain noodles and use in Haluski.

Haluski is a Polish cabbage and noodle dish. Smokey bacon and Kielbasa sauteed with cabbage, onions & garlic and then tossed with egg noodles! This is peasant comfort food at it's best!!
Ingredients
1 cup chopped onion
One Polish kielbasa or smoked sausage
1 pound of shredded cabbage
Half pound bacon
Two large cloves minced garlic
1 pound large egg noodle pasta
1/2 cup chicken broth
4 tablespoons of butter
Salt and pepper to taste
