How To make Polish Noodle Casserole
1/2 lb Cooked and drained noodles,
2/3 c Sour cream,
2/3 c Cottage cheese,
2 tb Minced onion,
2 tb Salt,
1/2 ts Powdered mustard, and
1/4 ts White ground pepper.
INStrUCTIONS Place: Cooked and drained noodles in a buttered 1 quart casserole dish. Mix: Sour cream, cottage cheese, minced onion, salt, powdered mustard, and white ground pepper. Mix the above with the noodles in the casserole dish. Bake in a preheated 350 F. oven for 25 minutes. (The noodles on top should begin to brown.)
To be a bit more fancy, when the 25 minutes is over, pull the casserole out of the oven, smear it with a bit of butter, and allow it to cook another 5 to 10 minutes. To be even more fancy, sprinkle some parmesan cheese on top of the butter before putting the casserole back into the oven.

How to make Haluski (Fried Cabbage, Bacon, Kielbasa, Onions & Egg Noodles)
Haluski is a Polish cabbage and noodle dish. Smokey bacon and Kielbasa sauteed with cabbage, onions & garlic and then tossed with egg noodles! This is peasant comfort food at it's best!!
Ingredients
1 cup chopped onion
One Polish kielbasa or smoked sausage
1 pound of shredded cabbage
Half pound bacon
Two large cloves minced garlic
1 pound large egg noodle pasta
1/2 cup chicken broth
4 tablespoons of butter
Salt and pepper to taste

Haluski (aka Cabbage and Bows)
Happy New Year! Today I'm sharing my mom's Haluski recipe which she lovingly refers to as Cabbage and Bows. This is an easy and flavorful side dish that will pair perfectly with your New Year's Day pork.
Haluski
1 large onion, thinly sliced
1 head of cabbage, thinly sliced
6 Tbsp. butter
1 lb. bowtie pasta or egg noodles
salt & pepper
In a large, nonstick skillet melt 4 Tbsp. butter over medium low heat. Add the sliced onions and cook until softened and slightly browned. Season with salt and pepper. Meanwhile, bring a large pot of water to a boil (I used 2 separate pots without thinking I could cook the pasta and cabbage together!). Salt the water and boil the pasta according to the package directions. Simultaneously, boil the cabbage for about 8 minutes (should be a similar cooking time to the pasta). Drain the pasta and cabbage. Add the pasta and cabbage to the cooked onions. Add the remaining 2 Tbsp. butter, season with salt and pepper, and stir to combine. Increase the heat to medium high and cook the haluski for about 15 minutes, stirring every few minutes so the pasta has time to brown and get crispy around the edges. ENJOY!

Easy Polish Haluski Recipe
Polish Haluski, noodles and cabbage, is the easy comfort food you need in your dinner rotation. Make with bacon or without, this is food for the soul.

8 ounces medium egg noodles
▢ 3 sliced bacon, chopped
▢ 3 tablespoons salted butter
▢ 1 1/2 cup sliced onion
▢ 1 head cabbage, cored and sliced thinly
▢ 1/2 tsp kosher salt
▢ 1/2 tsp fresh ground pepper
Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions. Drain and set aside.
Heat a large, deep skillet over medium high heat. Add the bacon to the pan and cook until crispy. Transfer the bacon to a plate with a slotted spoon and set aside.
Add the onions and cabbage to the skillet cooking until wilted, approximately 8-10 minutes, stirring occasionally.
Add the noodles and bacon to the cabbage tossing to combine. Stir in 2 tablespoons butter and season with salt and pepper.
Serve immediately.

Hungarian Cabbage and Noodles! Quarantine Cooking!
This Hungarian dish of cabbage and noodles is the ultimate comfort food! Cabbage and onions are sauteed in butter and bacon until caramelized and fragrant, and then tossed with egg noodles. With just a few simple ingredients you can have an amazing meal your family will love.
Cabbage and Noodles
1 head of cabbage
1 onion
6 to 8 slices of bacon
1/2 stick butter
1 pound bag of egg noodles (I use half bag)
Instructions
Cut bacon into pieces and fry in a large skillet until crisp. Remove bacon from skillet and add 1/2 stick of butter along with the fat rendered from bacon. Add chopped onion and cook until tender. Add chopped cabbage and cook until tender and caramelized. Takes about 15 to 20 minutes. In meantime cook egg noodles. I use half of a 1 pound bag which feeds about 4 to 5 people. If you use the whole bag you might want to use more butter. When the cabbage is ready add the egg noodles and mix everything together.
