How To make Peppercorn Beef with Grilled Vegetables
1/3 cup clear olive oil and vinegar salad dressing
1/3 cup dry red wine
1/4 cup snipped chives + 2 cloves garlic, minced
1 teaspoon cracked multicolored or black peppercorns
4 beef tenderloin steaks or beef sirloin -- cut 1-1
1/4" thick Vegetable Kabobs -- see recipe below
For marinade, combine the salad dressing, red wine, chives, and peppercorns. Place beef in a heavy plastic bag set in a large bowl. Pour marinade over beef in bag; seal bag. Marinate in the refrigerate for 8-12 hours, turning meat occasionally. Remove the beef from the bag; reserve marinade.
Grill beef on the rack of an uncovered grill directly over medium coals for 22 to 26 minutes for medium doneness, turning once and brushing with reserved marinade halfway through grilling. Discard marinade.
Arrange Vegetable Kabobs over coals during the last 10-12 minutes of grilling and cook until browned and tender, brushing with olive oil and salad dressing mixture. Turn occasionally. Serve kabobs with beef. Makes 4 servings.
Vegetable Kabobs: Quarter 8 tiny new potatoes. Cut 2 small red onions into 6 wedges each. Halve 1 small zucchini lengthwise and cut into 1/2 inch thick slices. Set vegetables aside. Cook potatoes in a small amount of boiling water in a medium covered saucepan for 10 minutes. Gently stir in the onion wedges, 8 baby yellow sunburst squash, and 4 miniature sweet peppers or 1 medium red sweet pepper quartered. Cover and cook for 5-8 minutes or until vegetables are nearly tender. Drain; cool slightly.
Alternately skewer the precooked vegetables and uncooked zucchini onto eight 10 inch skewers.
Combine 1/4 cup clear olive oil and vinegar salad dressing and 2 teaspoons snipped fresh rosemary in a small bowl. Brush mixture over kaboabs.

I know vegetables can be boring, but these are incredibly easy and delicious perfect to accompany any protein. The best part is that you can mix and match your veggies and use your favourite ones. Some more options could be bell peppers, asparagus, cauliflower, Brussel sprouts, or anything your heart desires. Feel free to use any oil of choice and as much as you like according to your lifestyle. There is no specific measurements as you can use as much vegetables as you like or enough to fit the sheet pan rows. You will need:

baby potatoes quartered
1/2 an onion quartered
1 zucchini cut into circles
1-1.5 cups broccoli florets
3/4 cup organic baby carrots
1 cup mushrooms
1-2 tablespoons avocado or olive oil
salt, pepper, dry oregano to taste

Please note: Feel free to use any vegetables you love. You can use any oil but I like olive oil or avocado oil. If you want a more nutty but flavour you are also more than welcome to add some grated Parm as well.

Line a baking sheet with parchment paper so that we can have a mess free side dish. Cut all of your vegetables into equal pieces and arrange each vegetable into individual rows. Sprinkle with salt pepper and dry oregano and the oil. Massage each row and roast in a pre-heated 425F oven for 25-30 minutes or until soft roasted and caramelized. Enjoy and follow for more.

These are by far some of the best wraps i’ve made, the flavours are absolutely incredible, chicken is so juicy and the lemon pepper sauce is insanely good!????????????????
Macros per Wrap (Total 3 wraps)
409 Calories - 41g Protein | 32g Carbs | 13g Fat
Ingredients (For 3 Wraps)
- 540g Boneless Skinless Chicken Thighs (approx. 180g each wrap)
- 3 Minced Garlic Cloves or 1 tsp Garlic Powder
- 2 tsp Oregano
- 2 tsp Paprika
- 1 tsp Salt & Pepper
- 1/2 Lemon Juice
- 3 Lebanese Flatbreads (Brand: Filla Bakery - there are other brands too, i get these from a local Middle Eastern or Sainsburys/Asda)
- Shredded Lettuce
- Sliced Red Onion
- Diced tomato
Lemon Pepper Sauce
- 50-60g Light Mayo (Brand: Hellmans)
- 15-20g Sriracha
- 1/2 tsp salt, pepper, paprika
- 1 whole Lemon Juice
Use a whisk to fully combine and mix till smooth

Cooking Instructions
- Let the chicken marinate for 30mins or more
- Place the chicken onto skewers
- Oven for 30mins at 200C or Air fry for 18mins at 200C
- You can brush some melted light butter over the chicken before cooking
- You can use chicken breast for this recipe if preferred

Ginger in a tomato soup sounds unusual. It works beautifully though, bringing a really nice fragrant warmth. Give it a go.
600ml Vegetable Stock
12 Vine Tomatoes
400ml Coconut Milk
Knob of Ginger
5 Cloves of Garlic
2 Red Onions
1 Red Chilli
Bunch of Coriander
Loaf of Sourdough
1 Tbsp White Wine Vinegar
Salt
Pepper
Olive Oil
Step 1.
Preheat your oven to 180°C/356°F.
Step 2.
Halve the tomatoes and place on a baking tray (chopped sides facing upwards). Drizzle olive oil over the tomatoes. Add the garlic cloves (skins on) to the tray along with the ginger (skin on). Sprinkle a pinch of salt over the tray. Roast in the oven for 20 minutes.
Step 3.
Remove the baking tray from the oven and move the tomatoes over to one side of the baking tray.
Step 4.
Slice up your onions, add them to the tray along with whole red chilli. Drizzle olive oil and salt over the top and place back into the oven for 25 minutes.
Step 5.
Take the tray out of the oven and peel the skin off the ginger and squeeze the garlic out of the skins.
Step 6.
Add the contents of the baking tray to a saucepan, followed by the coconut milk and vegetable stock. Blend until a smooth orange colour. Add a drizzle of white wine vinegar and a pinch of pepper. Mix together.
Step 7.
Remove the soup from the heat and ladle into bowls. Top with a drizzle of olive oil, a few drops of coconut cream and a scattering of chopped coriander. Serve with two slices of toasted sourdough and enjoy!

1.5 lb Skirt steak, cut into thin stripes

2 tbs Rice flour, to coat and thicken sauce

1 Red bell pepper cut into julienne
1 orange bell pepper , cut into julienne

1/2 Tsp Sesame oil
1 Tsp Honey
