How To make Beef Tenderloin with Spring Vegetables
2 cups beef stock
or canned broth
1 cup chicken stock :
or canned low-salt
broth 4 small carrots :
peeled halved
lengthwise 16 green beans :
trimmed
1 red bell pepper cut into 8 strips
4 fresh shiitake mushrooms :
stemmed
8 asparagus spears trimmed
1 zucchini :
trimmed, cut into
-- 1/2-inch-thick rounds 4 beef tenderloin steaks :
(8-ounce)
2 tablespoons olive oil
1/2 cup dry red wine
6 tablespoons chilled unsalted butter -- cut into pieces

For Beef:
Combine beef stock and chicken stock in medium saucepan. Boil until reduced to 3/4 cup, about 20 minutes. Set aside.
Cook carrots in large saucepan of boiling salted water 3 minutes. Using slotte d spoon, transfer carrots to strainer and rinse under cold water. Add beans to boiling water; cook 1 minute. Transfer to strainer with carrots and rinse und er cold water. Drain well. Arrange carrots, beans, bell pepper, mushrooms, as paragus and zucchini in single layer on large baking sheet. (Stock and vegetab les can be prepared 4 hours ahead. Cover stock and vegetables separately and r efrigerate.)
Preheat broiler. Sprinkle steaks with salt and pepper. Heat 2 tablespoons oli ve oil in heavy large skillet over medium-high heat. Add steaks; cook to desir ed doneness, about 4 minutes per side for medium-rare. Transfer steaks to plat e; tent with aluminum foil to keep warm. Add dry red wine to same skillet. Bo il until red wine is reduced to 1 tablespoon, scraping up browned bits, about 3 minutes. Add reduced stock and bring to boil. Remove from heat. Add chilled butter a few pieces at a time and whisk just until melted. Season sauce to ta ste with salt and pepper.
Meanwhile, brush vegetables lightly with olive oil. Broil vegetables until cri sp-tender, about 3 minutes per side for carrots, green beans, bell peppers and mushrooms and about 2 minutes per side for asparagus and zucchini.
Spoon Champ onto 4 plates. Place steaks atop Champ. Arrange vegetables decora tively around Champ. Arrange vegetables decoratively around Champ. Spoon sauc e over vegetables and serve.

The Marinade
1 teaspoon cornflour (cornstarch)
1 teaspoon light soy sauce
1 teaspoon pure sesame oil
The Sauce
1/4 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon crushed black pepper
1 tablespoon Lee Kum Kee black pepper sauce
50 ml chicken stock
1 tablespoon light soy sauce
1 tablespoon oyster sauce
2 teaspoons Shaoxing rice wine

INGREDIENTS:
900g Flank Steak
2 each Red and Green Bell Peppers
1 Onion
SLURRY:
400ml Beef Stock
1/4 Cup Soy Sauce
2 tbsp Rice Wine
1 tsp Sesame Oil
3 tsp Brown Sugar
1 tsp Black Pepper
1/2 tsp Sesame Oil
1 tsp Garlic Powder
1 tsp Ginger Powder
MEAT MARINADE:
2 Stock Cubes (I used Knorr Chicken Cubes)
1/4 Cup Soy Sauce
3 tbsp Corn flour
1 tsbp Minced Garlic
1 tbsp Minced Ginger
1/3 Cup Honey
2 tbsp Vegetable Oil
1/2 tsp Sesame Oil
1 tsp Black Pepper

SHAKING BEEF | BO LUC LAC⤵️
MARINADE
2 lbs beef, cubed. I used ribeye
A lot of minced garlic (like 10 cloves)
3 TBSP oyster sauce
2.5 TBSP low sodium soy sauce
1/2 tsp fish sauce
3 TBSP oil of choice- I used vegetable
2.5 TBSP sugar
1 tsp black pepper
ADDITIONAL INGREDIENTS
2 TBSP butter
3 bell peppers, any color
1. Combine all of your ingredients listed under marinade and marinate at least 10 mins at room temp (or over night but in the fridge)
2. Then on a skillet with some heat, cook/ sear your beef. About 1 minute each side (2 mins total). I cooked mine in 2 batches
3. In the same skillet after everything is seared, sauté onions for 2 minutes.
4. Then add bell peppers and cook for another 2 minutes
5. Then add your beef back in along with 2 TBSP salted butter. Cook until butter is half way melted. Then turn off heat & continue mixing untold butter is all the way melted
6. Serve with rice, fried egg, and salt, pepper lime dip

Today we are going cook stir fry beef with scallions. It’s called 蔥爆牛肉 in Chinese. Scallion is a very healthy ingredient. It helps with your digestion. And it’s perfect for this cold weather. 因爲它可以散寒通陽。Chef Luo is ready to teach us. Let’s do this. For the full recipe please visit:
Ingredients:
1 lb of beef, sliced
6 scallions, chopped into 3-inch pieces
Marinade:
A pinch of salt and sugar
1 /2 of an egg white
1 /2 teaspoon of cornstarch mix in 1 tablespoon of water
1 teaspoon of vegetable oil
Sauce:
2 tablespoons of light soy sauce
1 tablespoon of dark soy sauce
2 tablespoon of Shao Xing wine
1/3 teaspoon of sugar
1/4 teaspoon of salt
A pinch of white pepper
A dash of sesame oil
1 teaspoon of cornstarch with 1 tablespoon of water
1. In a bowl, mix the beef slices with the marinade seasonings for 30 minutes.
2. Add 3 cups of oil in a wok, in high heat add beef slices, spread them thoroughly, and cook till medium. Take them out and drain all the excess oil.
3. With the excess oil left in the wok, add the roots of scallions and cook till the fragrant comes out. Add the cooked beef slices. Add sauce and 2 tablespoons of water. And lastly, put all the green scallions in and stir everything thoroughly.
