How To make Grilled Tofu with Summer Vegetables
16 oz Firm Chinese tofu; cubed
3/4 c Teriyaki sauce
12 lg Mushrooms; halved
1 Red bell pepper
-cut into 1" pieces 1 Green bell pepper
- cut into 1" pieces 1 lg White onion
- cut into 1" pieces 12 Bamboo skewers
- soaked in water for 1 hour 2 tb Canola or safflower oil
2 c Barbecue Sauce
-- (see separate recipe) 1. Combine tofu and teriyaki sauce in sealed plastic bag. Freeze overnight
and thaw next day. Turn bag once or twice during thawing process. Reserve marinade. 2. Place tofu, peppers, onion, and mushrooms on skewers, alternating the

Spicy grilled tofu veggie salad | Salad month | Episode 35
Enjoy this flavorful salad packed with veggies!
Ingredients:
Tofu - 1/2 block
For marination - Chilli powder, cumin powder, turmeric powder, coriander powder, black pepper powder, garam masala powder, salt, paprika
Yogurt - 2 tsp
Olive oil - 2 tsp
All veggies below in required quantities:
Onion
Tomato
Cucumber
Green peppers/ capsicum
Carrot
Lime - half
Avocado
Spinach
For dressing:
Yogurt - 1/2 cup
Fresh dill leaves - a few
Salt - as needed
Detailed steps:
1. Mix the marination ingredients and marinate tofu for 15-20 minutes
2. Grill tofu with little olive oil until golden brown and crispy
3. Mix ingredients for dressing
4. Serve grilled tofu on bed of veggies with the dressing
Enjoy this light yet yummy meal for lunch or dinner!

Summer Vegetable Yakibitashi Recipe (Grilled Vegetables Soaked in Dashi Broth) | Cooking with Dog
We are making a delicious dish Yakibitashi using a plenty of summer vegetables. The vegetables soaked in the dashi stock makes the dish very delicious. The ginger root gives it a little bit of kick.
How to make Summer Vegetable Yakibitashi
(2 people) Cook Time: 30 minutes
70g Kabocha Squash or substitute: any type of sweet squash (2.5 oz)
1 Eggplant
2 Asparagus Spears
2 String Bean Pods
1/2 Red Bell Pepper
200ml Dashi Stock
or 200ml water+ 1/3 tsp dashi stock powder
1 tbsp Sake
1 tbsp Mirin
1 tbsp Soy Sauce
1/4 tsp Salt
6g Ginger Root, Shredded
Itogatsuo - very thin strips of dried bonito
1/2 tbsp Olive Oil or any type of vegetable oil
Substitute ingredients: Okra, Shishito Peppers, Zucchini and Mushrooms
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
