How to make Veg Penne Pasta with Pasta with Tomato sauce
(4-5 servings)
Ingredients
-3 glasses penne paste (uncooked)
-11/2 glasses Nutrela Soya granules
To make sauce
-379g (American garden)Pasta sauce
-200g readymade tomato purée or fresh 6 tomato boiled +5 garlic puréed,strained
-10 garlic grated
-1 pkt Mushrooms cut into half
-2 tbsp tomato paste
-1/2 tsp black pepper crushed
-1 tsp mixed Italian herbs
-1/2 tsp chili flakes
-1 tbsp Worcestershire sauce
-salt to taste
-4-5 basil leaves
-4 tbsp Parmesan cheese
-4-5 tbsp olive oil
-2 tbsp fresh cream
(Step 1)
-Cook pasta as per instructions,
al dente, which means it's still a little firm in the Center
(Reserve 1/2 cup cooked water) and set aside
-Cook Soya granules as per instructions, (11/2 cup soya granules 4 cups of water, salt to taste, once it is cooked (1 whistle) remove from the flame, rinse well in cold water 2-3 times & squeeze dry for further use)
(Step 2)
Let’s make paste sauce
-Heat oil in a wide pan over medium flame add grated/chopped garlic along with chili flakes stir for 2min,
-Add American Garden pasta sauce, (I used) fresh tomato purée, or tomato paste, dry ingredients black pepper, Italian herbs.
-dash sugar & salt Parmesan cheese, Worcestershire sauce, Basel leaves
Let it simmer for 5 minutes until the sauce to thicken
-Now add mushrooms, and cooked Nutella soya granules
-Mix well add cooked pasta toss wel-turns off the flame add fresh cream mix well
-Serve hot with garlic bread, garnish extra Parmesan cheese & relish this delicious pasta
-Bon appetite!!!

Anything, and I mean anything with Spanish chorizo tastes out of this world! This pasta dish is simple to make and a great substitute to the original mince pasta sauce. Guaranteed it will become a family favourite!
Chorizos originated in Spain and they are commonly made out of smoked pork and seasoned with paprika, salt & pepper ,garlic & dried herbs. Very flavoursome and they give a punch in all dishes.
There are two varieties, hot & spicy and non-spicy. The spicy version can be very hot, be warned. My favourite chorizos are from the Woolworths deli. The Aldi chorizos are super spicy and not all in my family like it too hot.

RECIPE
Serves 4
1 tablespoon olive oil1 red onion, thinly sliced
4 x cloves of garlic , chopped
4 Spanish chorizos, sliced finely
1 large zucchini, halved and sliced thinlySalt & pepper
270g can chargrilled capsicums, chopped roughy
250g button mushrooms
425g can tomatoes, chopped
1 tablespoon tomato paste
375g penne pasta
Shaved parmesan cheese to serve
Heat oil in a deep pot and fry the garlic & onion until onion is just soft. Add the chorizo & zucchini , combine well and fry for a minute. Add salt & pepper, button mushrooms, canned tomatoes, chargrilled capsicums & tomato paste. Bring to simmer, and simmer for 15mins.
Prepare a deep pan with water, bring to boil, add a drop of olive oil and salt and cook the penne as per the instructions on the package. Drain.
Add the pasta chorizo sauce to the drained penne, combine well . Serve in plates with parmesan cheese sprinkled over

¼ cup Olive Oil
1 Garlic Clove
¼ Red or White Onion
¼ cup Tomato Paste
½ cup Heavy Cream
1 tsp Chilli Pepper Flakes
Salt to Taste
2 tsps Black Pepper
1 tbsp Vodka
¼ cup Pasta Water
1½ cups Pasta
1 tbsp Butter
¼ cup Parmesan Cheese
Garnish with Chopped Basil
METHOD:
1. Over high heat, add 1½ cups of pasta in boiling water. Cook for 7-8 minutes or until al dente.
2. Strain the pasta from the water but keep ¼ cup aside.
3. Over medium heat add ¼ cup olive oil, 1 diced garlic clove, 1/4 diced red or white onion in a sauce pan.
4. Cook for 5 minutes or until onions are soft.
5. Add ¼ cup tomato paste.
6. Cook until for 5-10 minutes or until the tomato paste turns into a dark red color.
7. Add ½ cup heavy cream. Stir it altogether.
8. Add 1 tsp chilli pepper flakes, salt to taste and 2 tsps black pepper. Stir it altogether.
9. Optional: Add 1 tbsp vodka.
10. Add ¼ cup of pasta water left over.
11. Add the cooked pasta, 1 tbsp butter and ¼ cup parmesan cheese.
12. Stir and cook for another 5 minutes.
13. Garnish with freshly chopped basil.

Penne all'arrabbiata (spicy tomato pasta)
400g / 14oz penne or ziti, or other pasta of choice (short or long)
1 tbsp cooking / kosher salt, for cooking pasta
Arrabiata sauce
4 tbsp extra virgin olive oil
3 garlic cloves, finely minced
1 red cayenne pepper chilli, finely chopped (with seeds) (Note 2)
1/2 tsp chilli flakes (red pepper flakes)
800g canned crushed tomato
1 1/4 tsp cooking / kosher salt
1/4 tsp black pepper
1/2 tsp white sugar, only if needed (economical can be sour)
Serving:
Parmesan & finely chopped parsley (optiona)
1. Heat oil in a large pot over medium heat. Cook garlic 10 sec, then fresh and dried chilli for 1 min until garlic light golden. Add tomato, rinse out cans with the water, plus salt and pepper. Simmer 15 min (taste at 10 min, if sour, add sugar).
2. Meanwhile, cook pasta in water with 1 tbsp salt. Just before draining, scoop out 1 cup water then drain. Add pasta into sauce with ½ cup water, toss until pasta is all coated with sauce (use extra water if needed to loosen). Serve immediately with parmesan!
* SPICINESS – Has a fair kick to it, between medium and medium-hot. Not blow-your-head-off. To reduce spiciness, de-seed the cayenne pepper (most spiciness is in the seeds) –will lower to medium. If you’re still scared, leave out fresh chilli, start off with a baby amount of dried chilli, taste at 10 min simmer time then add more chilli bit by bit until you hit your threshold!
