Flourless Orange Cake
This is a wonderful moist Orange Cake that's literally bursting with orange flavour in a way that you can only achieve using whole oranges - rind and all! Boiling the oranges removes the bitterness from the pith. Made with almond meal instead of flour, it's a terrific easy cake to take to gatherings because it's gluten free so everyone can enjoy it!

.oats flour 1 cup (120g)
.oats 2/3 cup (75g)

Makes 16 cookies
Prep Time: 15 minutes
Cook Time: 14 to 16 minutes
Ingredients
¼ cup (60 g) unsalted butter, room temperature
½ cup (100 g) packed light brown sugar
2 large egg yolks
1 Tbsp (18 g) honey
1 tsp vanilla extract
¾ cup (110 g) all-purpose flour
½ tsp baking soda
½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground cloves
¼ tsp fine salt
¾ cup (75 g) lightly toasted chopped pecans
½ cup (85 g) white chocolate chips (see note)
½ cup (70 g) dried cranberries
Directions
1. Preheat the oven to 350°F (180°C). Grease a 9-inch (23 cm) fluted tart pan with a removable bottom.
2. Cream the butter and sugar by hand until smooth. Beat in the egg yolks, followed by the honey and vanilla. Sift the flour, baking soda, cinnamon, ginger, cloves and salt and stir the dry ingredients into the butter mixture. Stir in the pecans, chocolate chips and cranberries. Spoon this batter into the pan and press down until level, dipping your hands in flour to keep them from sticking. Bake for 14 to 16 minutes, until an even golden brown on top.
3. Cool the pan on a rack completely before slicing into wedges. The cookies will keep in an airtight container at room temperature for up to 4 days.
Note
The tart cranberries balance the sweet white chocolate, but switch to dark chocolate if you prefer a more intense chocolate flavour.

Nutty Oat Muffins | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana
These muffins have the goodness of oats and a great crunch from mixed dried fruits in each bite.
NUTTY OAT MUFFINS
Ingredients
2 tablespoons slivered pistachios + for topping
2 tablespoons slivered almonds + for topping
1 cup rolled oats
3 eggs
½ cup castor sugar
1 cup olive oil + for greasing
½ cup refined flour
½ teaspoon baking powder
2 tablespoons dried black currants
1 teaspoon vanilla essence
1 cup banana puree
Method
1. Preheat oven to 180º C.
2. Break eggs in a bowl. Add castor sugar and whisk using an electric beater till light and fluffy. Add 1 cup olive oil and whisk well.
3. Sift together flour and baking powder in the egg mixture. Add oats, dried black currants, pistachios, almonds, vanilla essence and banana puree and fold well.
4. Grease a muffin mould tray with some olive oil, pour the muffin batter filling ¾ and tap. Top with some pistachios and almonds.
5. Put the tray into the preheated oven and bake for 25-30 minutes. Remove from oven, cool and demould.
6. Serve.
