How To make Date Nutty Oatmeal Cookies
3/4 cup vegetable shortening
butter flavored 1 1/4 cups light brown sugar, packed
1 egg
1/3 cup orange juice
1 1/2 teaspoons vanilla extract
3 cups rolled oats :
quick-cooking
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup sweetened coconut flakes
1 cup chopped dates
1 cup chopped nuts -- walnuts or pecans
Preheat oven to 375 degrees; grease cookie sheets. In a large bowl with an electric mixer on medium speed, beat the shortening, brown sugar, egg, orange juice and vanilla extract until well blended. In a medium bowl, combine the oats, flour, baking soda, salt and cinnamon. With the mixer on low speed, beat the flour mixture into the shortening mixture until just blended. Stir in the coconut, dates and nuts. Drop the dough by rounded tablespoonfuls 2 inches apart onto the prepared cookie sheets. Bake one cookie sheet at a time for 10 to 12 minutes, or until the cookies are lightly browned. Cool for 2 minutes on the cookies sheets. Remove to racks to cool completely.

How to Make Crispy Oatmeal Cookies :
· Rolled Oats – ¼ cup
· Oat flour – ½ cup
· Jaggery – 1/3 cup
· Coconut Oil – 2 tsp
· 1 tbsp Chia in 2.5 tbsp water soaked
· Dried Fruits/Nuts of choice
· Baking Powder – ½ tsp
METHOD :
1. In a large bowl, add the soaked chia and beat well for 2 minutes. Then add Jaggery powder and coconut oil to it and whisk it until it dissolves.
2. Once combined well, slowly mix the dry ingredients – (oat Flour & baking powder) until just incorporated. Later, add rolled oats and nuts to this mixture and mix again.
3. Keep it to rest for 15 minutes. Meanwhile, Preheat the oven to 180o C for 10 min.
4. Place a butter sheet/paper on a baking tray.
Once the oatmeal cookie dough is set, scoop out the dough with a tablespoon or using your fingers and give the desired shape. Place it on the butter paper.
5. Place the cookie tray in the preheated oven and bake at 180C for 25 min at first.
6. Once done, take out the cookie tray and let it cool for 5 minutes and then again leave it in the oven for baking for more 5 min.
