Cheese strata is a comforting breakfast casserole that is easy to make in advance, or at a moment's notice. Make it cheesier with our Happy Valley’s Parmesan and Mozzarella Cheese. Put it together the night before for a make-ahead breakfast or make and bake it over morning coffee.
Spinach & Cheese Strata
Ingredients:
• 150 gm Happy Valley Mozzarella Cheese, grated
• 75 gm Happy Valley Grated Parmesan Cheese
• 300 gm baby spinach
• 3 tbsp. unsalted butter
• 1 brown onion, diced
• 4 garlic cloves, minced
• 10 slices of bread, cut into 2,5 cm cubes
• 7 eggs
• 250 ml milk & 250ml cream, mix
• 2 tbsp. Dijon mustard
• 2 tsp salt
• ¾ tsp black pepper
• ½ tsp ground nutmeg

HOW TO MAKE A STRATA |SAVORY MUSHROOM CHEESE STRATA
This Strata is a savory casserole filled with cheeses, sauted mushrooms, eggs and bread. It's great because you can make it your own by adding various, meats, cheese and veggies! It's great as a side dish, a main dish, or even a breakfast dish! The possibilities are endless!!

Ingredients:
2 T butter
1/2 lb sliced mushrooms
Saute in a pan until browned. Set aside
4 cups cubed day old french bread or other hearty bread such as foccaccia
3 large eggs
1 T finely minced onion
1 t minced fresh thyme (feel free to add in any other fresh herbs you like)
1/2 each of your choice of cheeses ( I used 1/2c blue cheese, 1/2 c gruyere cheese, 1/2 fresh mozzarella)
1 and 3/4 cups half and half
sour cream and chopped green onions for garnish if desired
Feel free to add in some crumbled sausage, cooked bacon, ham , or chicken!

6 slices stale or lightly toasted bread, cut into 2 inch pieces
1 1/2 cups thinly sliced shallots (5/6 shallots)
3 tbsp olive oil
8 oz baby bella mushrooms, sliced thinly
3 cloves garlic, minced
2 tsp dried thyme
1 tsp dried rosemary
1 tsp dried oregano
1/2 tsp crushed red pepper
several pinches black pepper
1 tsp salt
10 oz chopped spinach, well washed
Custard:
1 lb soft tofu (or silken)
2 tbsp lemon juice
2 tsp yellow mustard
1 tbsp cornstarch
1/2 cup vegetable broth or water (if using water, add 1/4 tsp salt)

290g (2.5 cups) cooked ham, bacon, sausage, turkey - or no meat!
115g spinach
230g mushrooms
20g (1 1/2 tbsp.) butter
1 clove of garlic, grated
1/4 tsp. nutmeg
2 tsp. salt
1 tsp. black pepper
8g (1 tsp.) English mustard (or Dijon)
470ml (2 cups) whole milk
6 eggs
one loaf of stale bread (or fresh!)
400g cheese (any cheese, but I used gruyere)
chives, for garnish
