Here is an AMAZING casserole that my granny use to make with the leftover Thanksgiving turkey. She also used her home canned turkey to make it as well. If you aren't a fan of turkey, chicken could be used as an alternative. This recipe requires very few ingredients & very little time. It's very flavorful & a much loved family recipe! Turkey Casserole Made with Leftover Turkey | Turkey Casserole Recipe | King Ranch Turkey Casserole
Do you have left-over turkey for Thanksgiving and don’t know what to do with it? Here is an easy recipe that I make year after year and it never fails.
???????????? KING RANCH TURKEY CASSEROLE
1 lb. boneless skinless cooked turkey, cubed
4 tablespoons butter
1 green bell pepper, chopped
1 onion, chopped
2 cans 10 oz. Rotel diced tomatoes and green chilies
1 can 10.5 oz. cream of mushroom soup
1 can 10.5 oz. cream of chicken soup
10 corn tortillas, torn into bite size pieces
8 oz. cheddar cheese, shredded
Bake at 325F OR 165 C for 40 minutes. Serve with tortilla chips.

Today, we are showing you how to take your Thanksgiving leftovers and make them better than the original. Everyone loves Thanksgiving leftovers until day three hits. So today, we're going to show you how to make those leftovers into something delicious that your family is going to absolutely love!

00:30 Turkey Fricassee Recipe
Dressing Layer
2 (6 ounce) boxes Turkey Stuffing Mix (we used Stove Top)
1/2 teaspoon sage
1 cup diced celery
1 onion diced
2 small Gala apples (diced)
8 ounces sliced fresh mushrooms
1/2 cup butter
21 ounces (1 1/2 cans) chicken broth
In a large bowl combine stuffing mix, sage, celery, onions, and apples.
In a saucepan add mushrooms, butter, and chicken broth. Cook over medium heat until butter is melted. The mushrooms will continue to cook during the baking time. Add this mixture to the stuffing mixture in the big bowl and mix together thoroughly. Set Aside.
Casserole Ingredients
3 cups leftover turkey or chicken (diced)
2 (10.5 ounce) cans of Cream of Mushroom soup
1 1/4 cups leftover gravy (could also use chicken broth but gravy adds best flavor)
1 1/2 cups milk
1 teaspoon paprika (optional)
Preheat the oven to 375 degrees F. Spray a 9 x 13 inch pan. Press 2/3 of the dressing into the bottom of the pan. Then cover with diced turkey. Then cover the turkey with remaining 1/3 of the dressing.
In a saucepan mix together soup, gravy, and milk. Bring to a boil and stir until smooth. Pour this mixture over dressing and sprinkle lightly with paprika (optional).
Bake for 90 minutes, or until the surface is brown and bubbly. We like to bake covered and then remove the aluminum foil the last 30 minutes of cook time.
Serves 8-10

Easy Leftover Turkey Tetrazzini Recipe
This incredibly easy-to-make full-flavored turkey tetrazzini recipe is the perfect meal to serve up to your family and friends after the holidays.
Pronounced teh-trah-ZEE-nee, Turkey tetrazzini is an adaptation of chicken tetrazzini which is said to have been named after the famous opera singer Luisa Tetrazzini. This simple recipe combines pasta with chicken, or turkey, with a sherry-parmesan cheese cream sauce. It is commonly sprinkled with parmesan or breadcrumbs, or both, before baking until golden brown and bubble.
Turkey seemed to have really popularized this dish as a household casserole recipe in the early to the mid-20th century. It has also become a go-to meal for leftover turkey after Thanksgiving and Christmas. This easy-to-make dish can also be customized to your liking.
Ingredients for this recipe:
• ¼ cup unsalted butter
• 1 peeled and small diced yellow onion
• 2 cups sliced button mushrooms
• 2 cups sliced baby bella mushrooms
• 2 finely minced cloves of garlic
• 1/3 cup all-purpose flour
• 1/3 cup sherry
• 3 cups chicken stock
• 1 cup heavy whipping cream
• 5 to 6 cups large diced cooked turkey
• 1 cup grated parmesan cheese
• 1 pound spaghetti, linguine, fettuccini, or egg noodles
• 1 cup peas
• ½ cup breadcrumbs
• salt and pepper to taste
