How To make Muffins Basic & Variations
2 c Unbleached All-purpose Flour
2 tb Granulated Sugar
1 Large Egg
1/2 c Vegetable Oil
1 tb Baking Powder
1 ts Salt
1 c Milk
Grease 12 2 1/2-inch muffin cups. Heat oven to 400 degrees F. Sift Flour, baking powder, sugar and salt into a medium-sized bowl. Stir to mix well. In a small bowl, beat egg with a fork. Add milk and oil. Add all at once to dry ingredients. Stir mixture only until dry ingredients are moistened. Batter will be lumpy. Drop batter from a tablespoon into prepared muffins pans, filling each cup half to two-thirds full. Bake 15 to 20 minutes, or until golden brown. Remove from pan and serve hot with butter, jam or marmalade. VARIATIONS: GINGER MUFFINS: Add 1/2 Cup finely diced candied ginger to flour mixture before adding liquid. BANANA PECAN MUFFINS: Prepare muffin batter but use only 1/2 cup milk. Add 1/2 cup chopped pecans and 1/4 t ground nutmeg to sifted flour. Add 1 cup
mashed, peeled banana with the egg, milk and oil. BLUEBERRY MUFFINS: Toss 1 cup washed and well-drained fresh or frozen blueberries with sifted flour mixture before adding liquid. ORANGE MUFFINS: Cut 2 peeled navel oranges into sections. When batter is in the cups, place an orange section on top of each and sprinkle lightly with granulated sugar. CHEESE MUFFINS: Fold 1/2 cup grated sharp yellow cheese into muffin mix with the last few strokes on batter. Serve hot with scrambled eggs and bacon for a special breakfast. SURPRISE MUFFINS: Fill muffin cups 1/3rd full of batter. Drop 1/2 t of your favorite jelly in center of batter. Add batter to fill cup 2/3rds full. Kids just love these as you will. COCONUT MUFFINS: Add 1 c Shredded coconut with the last few strokes of mixing. For a snack have coconut muffins, butter and milk. CHIVE MUFFINS: Fold 1/4 cup chives into the batter during the last few strokes and serve at dinner. Great with a steak and salad.

Super easy and delicious plain vanilla muffins recipe! Just mix everything together, bake and these yummy and simple muffins are ready to be served with your cup of tea or coffee.
So soft, moist and fluffy , you will never buy vanilla muffins again! Nothing compares to a homemade freshly baked muffins. Impress your loved ones with your baking skills, but don't tell them how easy it was ;)
This recipe makes 12 vanilla muffins.
Prep time: 10 minutes.
Baking time: 25 minutes.
Total: 35 minutes.
RECIPE:
2 eggs
125ml (1/2 cup) vegetable oil
250ml (1 cup) milk
200g (1 cup) sugar
1 tsp vanilla extract
360g (3 cups) flour
1 tsp baking powder
1/2 tsp salt
100g (2/3 cup) raisins or chocolate chips (optional) - I did not add it
Bake in a preheated oven at 180C / 360F / Gas mark 4.
Baking time: 20-25 minutes, or until toothpick comes out clean.
Every oven is different, cooking times may vary slightly, keep checking it every 5 minutes after 20 minutes of baking.

Hello welcome to Sundae Bakes new baking channel!
Muffin, so easy to make and if you are creative you can make variations with this simple plain muffin recipe. These are the ingredients that are currently available in my pantry. You can use any that you already have!

Ingredients
All Purpose Flour 300 grams
Baking Powder 1 tsp
Baking Soda 1 tsp
Salt 1/4 tsp
Sugar 170 grams
Eggs 2
Plain Yogurt 160 grams
Unsalted Butter 40 grams
Milk 80 grams
Oil 90 grams
Bake first in 210C pre-heated oven for 5 mins and then lower down the temperature to 170C bake for 15-20 mins.
Chocolate — cocoa powder, couverture chocolate chunks
Oreo — oreo cookies
Matcha — matcha powder, white chocolate chips, sweet cream cheese
Blueberry — fresh blueberries and almond
Strawberry — strawberry jam, sweet cream cheese, strawberry biscuits, sweet cream cheese
Carrot — grated carrot, walnut, nutmeg powder, cinnamon powder, sweet cream cheese

Big Batch Muffin Mix ~ Bulk Muffin Mix Recipe ~ Noreen's Kitchen
You know I am all about the Big Batch! Today I am sharing a big batch muffin mix that will make your life super easy! These are a bit different from other bulk muffin mixes because they have old fashioned rolled oats in them. These give the muffin great body, texture and nutrition! With the cool mornings of autumn on the way these are a great way to pop a pan in the oven and have warm muffins of any kind for breakfast! Your options are endless as to the flavors you put inside!
This muffin mix will make 6 batches which will make 1 1/2 dozen each. 18, generous muffins that you can flavor up any way you like. This is a plain base that you add wet ingredients to and make delicious warm muffins anytime you like!
The base starts with 10 cups of all purpose flour. You can also use 5 cups all purpose and 5 cups of either whole wheat or white wheat flour if you like. Then add 4 cups of granulated sugar or 2 cups of granulated and 2 cups of brown sugar. Next goes in, 4 cups of old fashioned rolled oats for fiber and body and 6 tablespoons of baking powder and 2 tablespoons of Kosher salt. If using fine salt, only use 1 tablespoon.
Mix the dry ingredients up very well and pour into an airtight container or a jar with a tight fitting lid. Now you are ready to make muffins anytime of day! What's your favorite? Chocolate chip, blueberry or cinnamon swirl? So many options and you can make any one of them!
To make a basic batch of muffins add 3 cups of muffin mix to a bowl with 2 whole eggs, 1 1/2 cups milk and 1/4 cup of vegetable oil. You can also choose to use melted butter in place of the oil, however I find that it makes a much denser muffin. Mix well and add in what you like. A cup of chocolate chips and a teaspoon of vanilla. A cup of frozen blueberries and a teaspoon of vanilla and a teaspoon of lemon zest. The possibilities are endless.
You will be able to find a recipe on my website very soon with the measurements and a print option as well a a list of variations that you can make with this big batch muffin mix. As of the release of this video I am experiencing Hurricane Florence. I will get the recipes posted as soon as possible. In the mean time I have provided you with a Google Docs printable as a temporary fix.
