How To make Mom's Noodle Casserole
1 pound ground beef
1 tablespoon oil
salt 1 can tomato sauce -- 16oz
8 ounces twisty noodles
8 ounces cream cheese
1 cup sour cream
1 cup cottage cheese
1/3 cup green onion
Brown beef in oil. Salt. Add tomato sauce.
Cook twisty noodles.
Mix together cream cheese, sour cream, cottage cheese and green onion.
Put in greased casserole dish a layer of noodles, layer of cheese mixture, and a layer of meat. Repeat. Bake at 350 degrees for 40 minutes. Remove cover last 15 minutes. Serves 10

I made a few changes that I share in the video. Basically I made mine smaller and used gluten free products. I also omitted the onion and mushrooms and used onion powder and garlic powder.
For future use I have noted for myself -- add bread crumbs to top. I will also definitely search for either pimentos or red peppers. Also if my daughter will not be eating with us I will add the chopped onion and mushrooms.

Here’s your recipe!
1 Cup Celery, Chopped (About 2 Stalks)
1 Small Onion, Chopped (About 1/4 - 1/2 Cup)
2 TBS Green Pepper, Chopped
1 TBS Butter
1 Can (3 Oz) Chow Mein Noodles
1 Can Cream of Mushroom Soup
1 Can (6 1/2 oz) Tuna, Drained
1/2 Cup Water
1/4 TSP Pepper
3/4 Cup Salted Cashews or Peanuts
Set oven to 350. Cook celery, onion and green pepper in butter until the onions are translucent. Reserve 1/3 cup noodles and add remaining noodles along with the rest of the ingredients to the pan, stir well. Pour in ungreased
1 1/2 quart casserole. Sprinkle remaining chow mein noodles over the top. Bake uncovered for 30 minutes until hot and bubbly.
