How To make Oyster Noodle Casserole
4 ounces egg noodles
broad
1 pint oysters :
shucked
6 tablespoons butter 3/4 stick*
3 tablespoons yellow onion :
finely chopped
2 tablespoons green pepper -- finely chopped
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon salt
1/8 teaspoon black pepper
1 pinch cayenne pepper
1/2 cup bread crumbs -- fine dry
* or margarine
Preheat the over to 425 Deg. F. Cook the noodles according to the package directions, drain thoroughly in a colander, and set aside.
Meanwhile, drain the oysters, reserving the liquor and set both aside. Melt 3 tablespoons of the butter in a 1-quart saucepan over moderate heat. Add the onion and green pepper, and cook, uncovered, for 5 minutes, or until the onion is soft.
Blend in the flour with a wire whisk, then add the milk, and stir vigorourly until the mixture is thickened and smooth--about 3 minutes. Add the oyster liquor, salt, black pepper, and cayenned pepper.
Place half the noodles in a butter 1-1/2 quart casserole, cover with the oysters, then add the remaining noodles. Pour the sauce over all, top with the bread crumbs, dot with the remaining 3 tablespoon of butter, and bake, uncovered for 15 minutes or until brown and bubby.

Oyster Omelette the Taiwanese style 蚵仔煎 on Oyster noodle (Mee Sua ) 台湾蚵仔面线
6-9 large oysters
2 eggs large size
Chinese chives 2/3 cup(minced)
Bok Choy 小白菜 or soft tender leafy vegetable (1-1/3 cup)(shredded)
ginger 1 tbsp (minced)
garlic 1 tbsp (minced)
2tbsp sweet potato flour (optional starch)
1tbsp tapioca flour (optional starch),
1 tbsp of miso (1 tsp optional)
1 tsp of fish sauce (optional)
1 tbsp fresh lemon juice
6 tbsp of water for the flour mixture of the omelette
or in your side sauce: ketchup, sugar, sour plum powder (optional), miso1 tbsp, lemon juice 1 tbsp, 1tsp tapioca flour (starch). hoisin sauce (optional)
if you intend to flip your omelette, make it smaller so its easier to flip individually.
Hearty Creamy Oyster Stew Recipe Perfect for the Holiday Season
Creamy oyster stew is a Christmas tradition for many families. After wondering where it came from, it turned that this tradition came from Irish immigrants who used to eat soup or stew of fish on Christmas Eve as Catholic tradition banned meat on Christmas Eve. I have eaten many versions of oyster stew and many of them seem very simple with milk, butter, salt and pepper, which doesn't really justify the word stew in the name oyster stew. Maybe more like a soup. While I don't mind the simple version, the soup boy in me wanted to create something heartier and elevated to create a wow factor. This oyster stew recipe includes some components that a good clam chowder would have such as bacon, celeries, and potatoes elevated with flavors from dry white wine, fresh thyme leaves, white pepper, and cayenne pepper. This is kind of a whole she-bang goodness kind of oyster stew. Despite using all these elements, the final product does not hide oyster flavors at all. Those big chucks of oysters and all the oyster juice from the jar provide a deep and intense oyster flavor throughout the dish.
Ingredients:
3 bacon strips
¼ stick butter
1 shallot
4 cloves garlic
1/3 potato
1 celery stick
½ cup dry white wine
3 cups whole milk
1 cups half & half
½ tsp white pepper
½ tsp salt
¼ tsp cayenne pepper
1 tsp thyme leaves
2 tsp corn starch & 2 tbsp water
1 jar of fresh oysters
1 tsp fresh parsley
green onion to garnis

Lo Mein Noodles

Ingredients
Sauce:
1/4 cup (60 ml) chicken stock
3 tablespoons (45 ml) oyster sauce
1 tablespoon (15 ml) soy sauce
1 teaspoon cornstarch
1 teaspoon sesame oil
Noodles:
3 tablespoons (45 ml) vegetable oil
4 teaspoons ginger, thin julienne
2 teaspoons (10 g) garlic, minced
1/2 pound (250 g) chicken breast or thigh, thin bite-sized slices
2 to 3 cups fresh egg noodles, such as pancit
1/2 carrot, julienned
1/4 pound (125 g) baby bok choy, bottoms removed, cut on bias
3 scallions, cut into 1/2-inch bias pieces
Directions
For the sauce: Stir together the chicken stock, oyster sauce, soy sauce, cornstarch and sesame oil. Set aside.
For the noodles: Heat a pan to high and add the oil. Once you see wisps of white smoke, add the ginger and garlic and cook until light brown and fragrant, about 20 seconds. Stir in the chicken and cook until medium, about 1 minute.
Add the noodles, carrots and bok choy to the pan and cook until tender, about 1 minute.
Stir the sauce, pour into the pan and incorporate all ingredients well.
Continue to cook until the chicken is cooked through and the sauce starts to bubble and thicken. Transfer to a serving platter, garnish with the scallions and serve immediately.
