How To make Mint Truffles
1 pk Mint chocolate chips(10oz)
1/3 c Whipping cream
1/4 c Butter or margarine
1 pk Chocolate sprinkles(3oz)
1. Melt chips with whipping cream and butter in heavy, medium saucpan
over low heat, stirring occasionally. Pour into pie pan. Refrigerate until mixture is fudgy, but soft, about 2 hours. 2. Shape about 1 tablespoon of the mixture into 1-1/4 inch ball. To shape, roll mixture in your palms. Place ball on waxed paper. 3. Place sprinkles in shallow bowl. 4. Roll balls in sprinkles, place in petit four or candy cases.( if coating mixture won't stick because truffle has set, roll between your palms until outside is soft. 5. Truffles can be refrigerated 2-3 days or frozen several weeks. Hint: Truffles are coated with cocoa, powdered sugar, nuts, sprinkles or cookie crumbs to add flavor and prevent the truffle from melting in your fingers. Makes about 24 truffles.

NO BAKE Chocolate Mint Bars | The Recipe Rebel
These easy Mint Bars are a no bake Christmas treat the whole family will love!

INGREDIENTS:
Base:
1/2 cup butter
1/3 cup cocoa
1/4 cup sugar
1 egg
2 cups graham cracker crumbs
3/4 cup shredded coconut
Filling:
1/4 cup butter
2 cups powdered icing sugar
2-3 tablespoons milk
1 teaspoon mint extract
green food coloring
Ganache
2/3 cup chocolate chips or chopped chocolate
2 tablespoons butter
INSTRUCTIONS:
Line an 8x8 pan with tin foil.
In a large microwave-safe bowl, combine butter, sugar and cocoa and microwave on high for 45 seconds. Stir, and microwave on high another 20-30 seconds if necessary so that all is melted and combined.
Let cool 5 minutes and quickly whisk in egg (mixture will thicken as the egg is incoprorated). Stir in graham crumbs and coconut until combined. Press into prepared pan.
Filling: With an electric mixer, beat butter until smooth. Add powdered sugar and 2 tablespoons milk and beat until smooth, adding a little more milk or sugar to reach desired consistency.
Add mint extract and green food coloring (as desired). Spread over base in pan.
Ganache: In a medium microwave safe bowl, combine chocolate and butter and melt in 20 second intervals on high, stirring each time, until smooth. Pour over filling in pan.
Refrigerate until completely set, at least 2-3 hours, before slicing and serving. Store in the refrigerator or freeze for up to a few months.

Peppermint Truffles
EASY 4 Ingredient Peppermint Truffles. Amazingly creamy peppermint white chocolate ganache center coated with MORE chocolate and drizzled with extra white chocolate. Perfect Christmas dessert!

Grinch Mint Truffles
1.2 pound package mint Oreos
8 ounces cream cheese, room temperature
1.5 pound package white almond bark
green gel food coloring
candy hearts
Use a food processor to crumble the Oreo cookies. There should be no large chunks in the Oreos. Place in a mixer bowl, add the room temperature cream cheese, and mix just until completely combined. 
Scoop out Oreo mixture and roll into balls. Place on a parchment paper lined baking sheet and place in your freezer until they are firm.
Once the truffles (Oreo balls) are firm, using your microwave, melt your white almond bark in a microwave safe bowl.  Stir in a few drops of green gel food coloring at a time until you reach the shade of green you want. (if the almond bark becomes too thick, stir in one or two teaspoons of vegetable or canola oil to help thin it out.)
Remove just a few truffles at a time from the freezer, dip in the green coating, and place each one in a miniature muffin liner.  Place a red candy heart on top of each truffle. Once all of your truffles are dipped, place in the refrigerator to firm up the truffles and set the coating.
