How To make Mint Surprise Cookies
Sift together
3 c Flour
1/2 ts Salt
1 ts Soda
Cream well:
1 c Margarine
1 c Sugar
1/2 c Brown sugar
Blend in 2 Eggs; unbeaten
1 tb Water
1 ts Vanilla
Additional:
9 oz Solid chocolate mint wafers
Walnuts Beat well and add dry ingredients. Mix thoroughly, cover and refrigerate 2 hours. Open a 9 ounce package of solid chocolate mint wafers. Enclose each wafer completely in a tablespoon of cookie dough. Place on a greased baking sheet, 2 inches apart and top with a walnut. Bake for 10-12 minutes at 375. -----

Ingredients
1 (18 oz) roll sliced 1/4-inch thin refrigerated sugar cookie dough
1 (14 oz) package chocolate mint wafers
1 tablespoon coarsely chopped ( or pecans) or enough to cover top of cookies walnuts
1 beaten egg
Preperation
1. Preheat oven to 375 °F.
2. Slightly grease a cookie sheet.
3. Place slices of sugar cookies on sheet, about 2-3 inches apart. Top each with a chocolate wafer. Cover wafer with another slice of cookie dough.
4. Brush dough with a beaten egg. Press nuts into top of dough. Bake for about 10 minutes. Makes about 20 cookies.

Green Peppermint Meltaways
(Betty Crocker's Cooky Book, 1963)
1c butter, softened
1/2c confectioners sugar
1tsp peppermint extract
1 1/4c cake flour
1/4tsp salt
green food coloring
Heat oven to 400. Mix butter, confectioners sugar, and peppermint extract thoroughly. In separate bowl, stir together flour and salt. Blend into butter and sugar mixture. Add food coloring, if desired, and mix until evenly distributed throughout. Drop by teaspoonfuls on ungreased baking sheet (cookies do not spread). Bake about 8 minutes, or until set but not brown. While cookies are still warm, dip in additional confectioners sugar OR colored sanding sugar. Makes 5 dozen cookies.
