Mint Chocolate Swirl Bark
Chocolate and mint desserts are one of my biggest weaknesses...I just can't get enough! When I saw this recipe for Mint Chocolate Swirl Bark I knew that it would be a winner - it's easy, delicious and fun to make.
This dessert is so easy that you'll think you're doing something wrong (trust me you're not). If you're in a hurry and need to speed up the hardening process just stick the bark in the refrigerator instead of letting it cool to room temperature.

These beautiful meringue cookies are light as air, perfectly sweet, and so easy to make! Great with a cup or coffee and look wonderful on a cookie tray! Meringue cookies are such a delightful addition to the table and so easy to make! I love to flavor mine with a drop of good vanilla but almond and even peppermint are great choices too. Try dipping or drizzling with chocolate for an extra layer of flavor and remember, these make wonderful gifts!.

PASCHA Chocolate Mint Swirl Frozen Dessert
Ingredients:
- 2 ripe bananas
- 1 can full fat coconut milk
- 5 medjool dates
- 1 ripe avocado
- Optional: green food colouring
- 1/3 cup PASCHA Make Me Smile! Spread
Directions:
- In a blender: add bananas, coconut milk, dates, and avocado.
- Blend until creamy.
- Add food green food colouring if using, and mix well.
- Pour into pan or container.
- Place dollops of PASCHA Make Me Smile! Spread throughout the batter.
-Using a knife, swirl Pascha Spread through the frozen dessert.
- Freeze overnight, or until firm.
- Remove from freezer and let sit a few minutes before serving.
- ENJOY!

RECIPE
Chocolate dough:
1/4 cup organic brown sugar
2 Tbsp. organic sugar
3 Tbsp. neutral baking oil
2 Tbsp. non-dairy milk
1/2 tsp. vanilla extract
2/3 cup all-purpose flour
2 Tbsp. unsweetened cocoa powder
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
Peanut butter dough:
1/3 cup peanut butter
1/4 cup organic brown sugar
2 Tbsp. organic sugar
3 Tbsp. neutral baking oil
1/2 tsp. vanilla extract
2/3 cup all-purpose flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/3 cup vegan chocolate chunks
Preheat the oven to 350 degrees Fahrenheit. To make the chocolate dough: to a bowl, add brown sugar, sugar, oil, non-dairy milk, and vanilla extract. Stir well. Add flour, cocoa powder, baking powder, baking soda, and salt. Stir until smooth, and set to the side. To make the peanut butter dough: to a bowl, add peanut butter, brown sugar, sugar, oil, and vanilla extract. Stir well. Add flour, baking powder, baking soda, and salt. Stir until smooth. To another bowl, add the chocolate dough, peanut butter dough, and vegan chocolate chunks. Stir gently, just until the doughs start to swirl together. Scoop and press the dough onto a lined baking pan. Bake 12-14 minutes. Makes one dozen cookies.
