Today Glen bakes this 1938 Boston Brown Cookies Recipe. These cookies are a take on The Boston Cookie recipe found in many American cookbooks and newspapers starting in the early 1880's. There are a few variations to the recipes, mostly with regards to spicing and the fruits used. They share what seems like a common ancestor in early Hermit recipes.
Ingredients:
¾ cup shortening
1 teaspoon soda
1 cup walnuts
½ cup small raisins
1 cup dates
2 cups flour
1 cup sugar
2 eggs
¼ teaspoon salt
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon cinnamon
Method:
Drop with teaspoon on lightly greased pan. Bake in a hot oven.
Method as shown:
Preheat oven to 190ºC (375ºF).
Cream together shortening, sugar and eggs.
Mix salt and spices into flour.
Stir flour into creamed mixture a little at a time.
Stir in fruit and nuts.
Bake for 10-12 minutes.
Makes about 36 cookies.

1 cup butter or margarine
1 cup white sugar
½ cup brown sugar, sifted
3 beaten eggs
2 teaspoons vanilla
3 ¾ cups flour
1 teaspoon salt
½ teaspoon soda
Cream the fat. Add the white and brown sugars a little bit at a time and cream together with the butter or margarine very thoroughly. Add beaten eggs and vanilla. Sift dry ingredients together and stir well into the first mixture. Chill the dough. Roll to about a fourth of an inch in thickness, sprinkle with sugar and run the rolling pin lightly over the sugar to press it slightly into the top of the sheet. Cut out the cookies, place on a cookie sheet and bake at 350ºF.

RECIPE: Oatmeal Surprise Cookies
INGREDIENTS:
3 bananas, ripe, large
1/4 cup vegetable oil
1 egg (optional)
1 1/2 teaspoons vanilla
1 1/2 teaspoon cinnamon
1 teaspoon Kosher salt
2 1/2 cups old fashioned oats
Cooking spray
Additional Ingredients:
1/2 cup of any two of the following (1 cup total):
Raisins, any color
Coconut, shredded
Nuts, chopped, any type
Chocolate chips, dark or semi-sweet
Fruit, dried, chopped, any type
Dates, chopped
INSTRUCTIONS:
1: Preheat oven to 350°. Spray 2 baking sheets with a cooking spray.
2: Mash bananas with a fork.
3: In a large bowl, mix ingredients together in order. Mix well after each addition.
3: Drop by a heaping teaspoonful on a greased baking sheet.
4: Bake at 350° for 25 - 30 minutes or until they start to become golden on the top and bottom.
NOTES:
Be creative and try other additional ingredients.
You can use 4 small bananas instead of 3 large.
I have substituted 1/2 cup no-sugar applesauce or pumpkin puree for some or all of the oil and they still taste great.
These freeze well. You can place a few in a sandwich bag in the freezer, and they are ready to go for an easy breakfast, snack, or in a lunch.
Use can use another type of salt if you prefer.
Old fashioned oats are also called rolled oats.

Ingredients:
Cut Out Sugar Cookies:
2 1/4 cups all-purpose unbleached flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup (1.5 sticks) unsalted room-temperature butter
3/4 cup granulated sugar
1 large egg, room temperature
2 tsp vanilla extract
1/4-1/2 tsp of almond extract
Directions:
Step#1- Incorporate your dry ingredients in a mixing bowl. In a stand mixer or using a hand mixer, mix together butter and granulated sugar until creamy and smooth.
Step#2- Add in egg, extract, and mix until smooth and incorporated. Slowly add in your dry ingredients and mix until well combined.
Step#3- Form dough into a round disc and place on parchment paper and refrigerate for at least 1-2 hours or up to 3 days. Make sure to bring the dough to room temperature before rolling it out. Roll to about 1/4 inch thick.
Step#4- Bake cookies at 350 degrees for 8-12 minutes (depending on the size and thickness of the cookie)
(*Raw dough can be kept in the refrigerator for 3 days or freezer for 1 month; Baked cookies can be kept out at room temperature in an airtight container for 1 week or in the refrigerator for 2 weeks).
Royal Icing:
3 cups confectioners' sugar
1/2 tsp vanilla extract
2 tsp light corn syrup
4.5-5 Tbsp. room temperature water
pinch of salt
Directions:
Incorporate all ingredients into a stand mixer or using a hand mixer, and mix until well combined.
Buttercream Icing:
1 cup (2 sticks) unsalted room butter
1 Tbsp. milk
1 tsp vanilla extract
1/2 tsp salt
4-5 cups confectioners' sugar
Directions:
Step#1- Mix butter until smooth and creamy; add in milk, vanilla extract, and salt and mix until well combined.
Step#2- Slowly add in your powdered sugar and mix until well combined. Make sure to not over mix to avoid air pockets in your frosting.
(*If your frosting is too thick, you can add milk to loosen it, 1 tsp at a time. For a thicker consistency frosting, add 1 Tbsp. of confectioners' sugar at a time until reaching desired consistency).
(*Buttercream frosting can last in the refrigerator for 1 month or freezer for 3 months).
