1 lb Boneless beef sirloin steak
1/2 c Chopped onion
1 cn (10 3/4 oz) Campbell's
Condensed Cream of Mushroom Soup 1/2 c Sour cream
1/2 ts Paprika
Hot cooked noodles Freeze steak 1 hour to make slicing easier.Cut steak into very thin slices across the grain.In a 2 qt. microwave-safe casserole, combine beef and onion.Cover with lid;microwave on high 5 minutes or until beef is no longer pink,stirring once during cooking. In small bowl,stir soup until smooth;stir in sour cream and paprika.Add to beef,stirring to coat.Cover,microwave @ 50 percent power 3 minutes or until heated through.Serve over noodles.Makes about 3 1/2 cups or 4 servings.

Ingredients:
1 lb (16 oz/454 g) beef (any cut will work, slice thinner when using tougher meats)
1 c (70 g) mushrooms (sliced, we are using white mushrooms here but have also used baby portabellos)
1 c (120 g) all-purpose flour
2 Tbsp (30 ml) vegetable oil
1 c (237 ml) water (to add the beef bullion cubes to)
2 cubes beef bullion
3/4 c (175 ml) Worcestershire sauce (seriously...I typically use half the bottle!)
1 lb (16 oz/226 g) sour cream
1/2 tsp (1 g) pepper
1/2 tsp (3 g) salt
1/2 tsp (2.4 g) onion powder
1/2 tsp (2 g) paprika
1 1/2 c pasta (1 1/2 c dry egg noodles - cooked, drained and rinsed)

As you will see with this Beef Stroganoff recipe.......it's not the classic recipe. I am a true believer in using leftovers so food does not go to waste. On top of that, I absolutely love turning leftovers into a new great meal. We had a 3.5lb top round steak for dinner on Saturday night and had roughly 1lb of meat leftover. My daughter also made a spread for crackers using cream cheese, garlic, salt and pepper. I also had a soon to be bad bell pepper that had to be eaten. As I'm brainstorming what to have for dinner last night, I think Beef Stroganoff. So here is what I did and my mock recipe which turned out 110% better than I thought it would have.
These ingredients are estimates and by eye.
Wolfe Pit Beef Stroganoff
1lb - Top Round (leftover and cooked to medium rare)
1-cup - Cream Cheese (leftover and seasoned with granulated garlic, salt and pepper)
2 - Beef Bouillion Cubes (melted in 2 cups hot water
1 - Medium Onion (medium dice)
1 - Medium Bell Pepper (medium dice)
3 TBS - Butter
1 Small Can - Mushrooms (use fresh if you like)
Pepper to taste (I didn't add any salt due to the bouillion cubes)
3 TBS - Flour
In a heavy Skillet combine butter, pepper and onion and sautee' until tender. Add flour and continue to cook over medium low heat until all of the butter is absorbed and you can smell a nutty flavor from the flour. Add in the beef broth, mushrooms with the juice and the cream cheese (use and season Sour Cream if you prefer). Mix while the gravy begins to thicken, add the meat and simmer till warmed through (do not overcook top round).
Serve over buttered egg noodles and garnish with chives or parsley. Salt and pepper to your desired taste! Enjoy!

Today I was quartering a chicken and found large masses of cancer in the chicken breasts. I have never seen this in chicken meat before. I have heard of cancer in pork meat but never seen it in chicken before. This is an example of why you should quarter your own chickens because you can see everything and discard the meat instead of just cutting around it. The grocery store refunded me and gave me a new chicken that was fine. In all my years first time seeing this. Let me know in comments if you have ever seen this before. #shorts
